Yoğurt Mayalandıktan Sonra Neden Sulanır?
Mayalanan yoğurdun sulanmaması için önceden önlem almak ve mayalama işleminin doğru bir şekilde yapılması önemlidir. Sulanmış yoğurt bu haliyle elbette tüketilebilir fakat ömrü normale göre daha kısa olacaktır.

Yoğurdun mayalanmasının altında yatan temel sebeplerden biri sütün yeterli sürede bekletilmemesidir. Mayalarken sütün kısa bir süre bekletilmesi veya fazla bekletilmesi sulanmasına sebep olabilmektedir.
Yoğurt mayalandıktan sonra doğru bir şekilde tüketilmemesi de yine yoğurdun sonrasında sulanmasına neden olan bir diğer faktör. Yoğurdu mayaladıktan sonra mümkünse kapalı bir şekilde çelik tencere içinde muhafaza etmelisiniz. Ve yine yoğurdu tüketirken bir tencerenin dibini görmekten kaçınmanız gerekiyor. Her zaman üstten alarak başka bir kaba aktarmalısınız.
Yoğurdun Sulanmasını Nasıl Önleyebiliriz?
- Yoğurdu mayalarken ısı çok önemlidir. Serçe parmağınız ile muhakkak ısısını kontrol ederek mayalamanız gerekiyor. Eğer parmağınızı 7 saniye içinde tuttuğunuzda yanacak kadar sıcak değil ise yoğurdu mayalamanızı öneriyoruz. Yaklaşık ısının 45 derece olması önemlidir.
- Yoğurdu söylediğimiz çok fazla miktardaysa çelik bir tencere içinde buzdolabında muhafaza etmelisiniz ve tüketilecek miktarda ayırıp bu şekilde tüketmelisiniz. Eğer her seferinde bunlarla uğraşmak istemiyorsanız, yoğurdu mayalayıp buzdolabında beklettikten sonra cam kavanozlara porsiyonlar halinde ayırarak her seferinde yoğurdun hava ile temas etmesini engelleyebilirsiniz.
- Yoğurdu mayaladıktan sonra birden soğumaması için, sıcak tutacak bir örtü ile iyice sarmanız ve oda sıcaklığında maksimum 6 saat bekletmeniz gerekiyor. Eğer bu süreden önce, örneğin 3 saat sonra yoğurdu oda sıcaklığından alıp direkt buzdolabına koyarsanız sulanmasına neden olabilirsiniz.
- Yoğurdu porsiyonlara ayırırken veya tüketilecek miktarını başka bir kaba aktarırken kesinlikle tahta kaşık kullanmanızı öneriyoruz. Böylece yoğurdun erkenden sulanmasını da önlemiş olursunuz.
- Yoğurdu tüketilecek kadar aldınız ama kaldı diyelim. Bu yoğurdu tekrar diğer yoğurt ile karıştırmaktan kaçınmanız gerekiyor. Üzerine streç çekerek ayrı bir şekilde muhafaza edebilirsiniz.
- Yoğurdu mayaladıktan sonra sabit tutmaya özen gösterin. Yoğurdu 6 saatlik beklemeye aldıktan sonra sabit bir yerde muhafaza etmeye özen göstermelisiniz. Sürekli hareket etmesi de yine yoğurdun sulanmasına neden olabilecek noktalardan biridir.
Yoğurt Mayalarken Nelere Dikkat Etmek Gerekiyor?
- Yoğurt mayalarken dikkat edilmesi gereken en temel nokta mayalama işlemi için kullandığımız yoğurttur. Bu yoğurt eğer sulu ise, yoğurdunuzun sulu olmasına neden olabilir. Yine ekşi olması yoğurdun ekşi olmasını sağlayacaktır. Eğer doğru bir şekilde muhafaza edilmemiş veya fazla beklemeye bağlı bozulma söz konusu ise yine yoğurdunuz da tutmayacaktır.
- Yukarıda bahsettiğimiz gibi, yoğurt mayalarken ısı çok önemlidir. Kaynatılan sütün sıcaklığı 45 dereceyi aşmamalıdır. Bunun için kullanabileceğiniz bir dereceniz yok ise yine bahsettiğimiz gibi serçe parmağınızı kullanabilirsiniz. 😊
- Mayayı yoğurt ile karıştırırken mümkün olduğunca sarsıntı yaratmamaya dikkat etmelisiniz. Mayayı kaşığı fazla hareket ettirmeden tencerenin dibine doğru indirin ve yine kaşığı çok sallamayacak şekilde mayayı bırakın.
- Yoğurdu mayaladıktan sonra ısının birden soğumaması çok önemlidir. Bu yüzden 6 saat oda sıcaklığında muhafaza edildikten, yani belli bir derece soğuduktan ve dinlendikten sonra buzdolabına kaldırılır. Yukarıda bahsettiğimiz gibi yoğurdu mayaladıktan sonra iyice sararak ısının birden düşmesini engelleyebilirsiniz.
Yoğurt Saklarken Dikkat!
Yoğurdu muhafaza ederken her zaman buzdolabında tutmaya özen göstermelisiniz. Yoğurt hassas bir gıdadır ve birkaç saat bile oda sıcaklığında beklemesi ekşimesine neden olabilir. Daha ilerleyen durumlarda ise hızlı bir şekilde bakteri ürettiğinden bozulacak ve tüketilmeyecek hale gelecektir. Bahsettiğimiz gibi, yoğurdu sık sık hava ile temas ettirmemek de yine tüketim ömrünü uzatan bir ayrıntıdır. Bu yüzden porsiyonlara ayırarak saklamanız yoğurdun sürekli hava almasını da engelleyecektir.
