Patateslerin Kararması Nasıl Önlenir?

Patates soyulduktan sonra oksidasyona uğrayarak kararma sürecine başlamış olur. Bu nedenle patatesi soyduktan sonra kararmaması için belli işlemlerden geçirmek gerekir. Patatesin kararmasını önlemek için uygulanabilecek yöntemler oldukça basit ve kolay yöntemlerdir.
Patateslerin Kararması Nasıl Engellenir?
1-)Tuzlu Su Karışımından Yararlanmak
Patatesin kararmasını önlemek için uygulanabilecek en etkili yöntem tuzlu su yöntemidir. Bu yöntemi kullanarak patatesi uzun süre soyulmuş olarak muhafaza etmek mümkündür. Bunun için öncelikle kullanılacak olan patateslerin tümünün iyice yıkanması gerekir. Yıkama işlemi tamamlandıktan sonra yıkanan tüm patateslerin sığabileceği büyüklükte bir kap çıkarılarak içi su ile doldurulmalıdır. Daha sonra bu kabın içerisine bol miktarda tuz atılarak karıştırılmalıdır. Bu şekilde tuzlu su karışımı hazırlandıktan sonra ise patatesler teker teker soyularak tuzlu su karışımın bulunduğu kabın içine konulmalıdır.
Tüm patatesler soyulduktan sonra kabın içinden alınarak istenilen şekilde doğranmalı ve tekrar kararmamaları için aynı suyun içine bırakılmalıdır. Tuzlu su karışımı patateslerin kararmalarını önleyerek patatesleri en güzel şekilde tüketmenize olanak sağlayacaktır.
Bu yöntemi uygularken patateslerin tamamen tuzlu su karışımının içinde kaldığından emin olmanız gerekmektedir. Bu şekilde patatesleri birkaç gün bile saklayabilirsiniz. Ancak bu durum patatesin içinde barındırdığı vitaminlerin erimesine neden olacağı için patatesleri kullanmadan hemen önce soymak daha sağlıklı olacaktır.
Bu yöntemi uyguladıktan sonra patatesleri kullanmadan önce kurulamak daha etkili sonuçlar verecektir. Özellikle de patatesleri kızartma yapmak için kullanacaksanız mutlaka iyi bir şekilde kurulamanız gerekmektedir. Aksi takdirde yağ ile buluşan su damlaları sıçrayarak yanmalara neden olur.
2-)Limonlu Su Karışımdan Yararlanmak
Limonda sebzelerin oksidasyonunu yani kararmalarını önlemede kullanılan malzemelerden birisidir. Ancak patates için en etkili sonucu tuzlu su vermektedir. Tuzlu su karışımının oluşturulamadığı durumda limonlu su karışımı oluşturularak patatesin kararması önlenebilir. Bunun için ilk olarak patatesler yıkanmalı ve soyulmalıdır. Daha sonra soyulmuş olan patatesler limon ile ovulmalıdır. Limon ile ovulmuş olan patatesler daha sonrasında limonlu su karışımın içine koyularak kararmaları önlenmiş olur.
