Kereviz Sapı Nasıl Temizlenir?
Kereviz maydonozgiller ailesine ait olan boyu 1 metreye kadar uzayabilen 2 yıllık bir bitkidir. Anavatanı Batı Avrupa ve Kuzey Avrupa’nın sahil bölgelerinde bulunan çukur ve sazlık kesimlerdir. Kereviz bitkisi kök kısmı olan yumru kısmı ve sap kısmı olan yaprakları olmak üzere iki kesimden oluşmaktadır. Gerek yumru kısmı gerekse de yaprak kısmı yenilebilir bir bitkidir. Yumru kısmı genellikle kereviz yemeği, kereviz salatası gibi alanlarda kullanılırken sap kısmı hemen hemen her yemeğin içerisinde kullanılabilir.
Kereviz sağlık açısından çok faydalı olan besinlerden birisi olarak mutfaklarda yer almaktadır. İçerdiği vitamin, mineral ve antioksidan zenginliği kerevizi önemli besinler arasında ilk sıralara yerleştirmektedir. Sap kısımları da bu besin değerlerini yüksek oranda içermesinden dolayı mutlaka tüketilmesi gerekmektedir. Özellikle çocuklar tarafından kereviz her ne kadar sevilen bir bitki olarak gözükmese de kerevizin sap kısımları yumru kısmına göre çok daha lezzetlidir. 1-)Yumrusundan Ayırma

Bu nedenle öncelikli olarak kerevizin sap kısmının yumru kısmına en yakın olan kısmından bir sebze bıçağı ile özenle kesilmesi gerekir. Bol miktarda besin değeri içeren kereviz sebzesinin vitamin ve minerallerini kaybetmemesi için uygun bir bıçak tercih edilmesi oldukça önemli bir noktadır.
2-)Ayıklanması
Özenle kesmiş olduğunuz kerevizin sap kısımlarını yıkamadan önce ayıklamanız gerekmektedir. Böylece yaprakların içinde çürümüş ya da erimiş yapraklar varsa bunları ayıklamış olursunuz. Bunun yanı sıra yapraklarda sararma gibi farklı durumlar ile de karşılaşılabilir. Bu aşamada önemli olan sağlıklı gözükmeyen tüm yaprakların ayıklanmasıdır.
3-)Yıkanması
Kereviz saplarının temizlenmesi konusunda uygulanması gereken 3. aşama ise ayıklanmış olan sap kısımlarının yıkanması kısmıdır. Bunun için ayıklamış olduğunuz kereviz saplarını öncelikli olarak bir kenarda toplayın. Daha sonra musluğu açarak akan suyun altında tüm kereviz saplarını sırayla ve dikkatle yıkayarak üzerlerinde bulunan tüm toz, toprak gibi atıklardan temizlenmesini sağlayın.
4-)Suda Bekletme
Son olarak uygulanması gereken aşama suda bekletme aşamasıdır. Böylece yaprakların üzerinde bulunan tüm mikroplar kırılarak sapların tamamen temizlenmesi sağlanmış olur. Bunun için sapların sığacağı genişlikte bir kabın içine su doldurulur ve üzerine bir miktar elma sirkesi ilave edilir. Yıkanmış olan saplar bu suyun içerisinde 10 dakika bekletilerek tamamen temizlemiş olur.
