Künefe dahil olmak üzere tüm şerbetli tatlılarda aslında aynıdır; eğer künefe soğuk ise şerbet sıcak olmalı, şerbet soğuk ise künefe sıcak olmalıdır.

Herkesin kafasında soru işareti oluşturan ve genelde hatalı yapılan bu durumun sonucunda tatlı hamurlaşır ve yenemeyecek bir kıvama ulaşmaktadır. Burada aslında mantık yürütmek önemlidir. Yani şerbet ve künefe sıcak ise künefenin hamurlaşması kaçınılmazdır. Aynı şey tüm şerbetli tatlılar için geçerlidir.
Künefe, ülkemizde özellikle Akdeniz bölgesinde yani Hatay – Mersin gibi illerimizde sıkça tercih edilen bir tatlı türüdür. Künefe için daha çok Lübnan tatlısı deniyor olsa da, ülkemizde sınır illerde de meşhur olmasından dolayı fazlasıyla bilinen bir tatlıdır. Peynir ve kadayıf kullanılarak yapılan bu tatlı her zaman sıcak olarak servis edilir.
Künefenin Şerbetini Yaparken Nelere Dikkat Edilmelidir?
- Künefe şerbeti hazırlarken ölçüsünü az hazırlamamaya özen göstermelisiniz. Her zaman su ve şeker aynı oranda karıştırılmalıdır aksi takdirde şerbet istenilen kıvamda olmayacaktır. 1 kilo kadayıf için şerbet ölçüsünü 3 bardak şeker, 3 bardak su olarak ayarlayabilirsiniz.
- Şerbetin içine limon suyu damlatmanız şerbetin kurumasını önleyecektir. Böylece her zaman yeni yapılmış gibi bir görüntüsü olacaktır şerbetin. Limon suyu ise şerbet kaynamaya başladıktan sonra fakat altını kapatmadan 1 dakika kadar önce eklenmelidir.
- Şerbeti kaynattıktan sonra, eğer kadayıfı pişirdiyseniz ve soğumuşsa direkt olarak soğumasını beklemeden kadayıfa dökmelisiniz. Eğer kadayıfı henüz pişirmediyseniz, şerbetin soğumasını beklemeniz gerekmektedir. Soğutmak için ise kesinlikle buzdolabı kullanmamanız gerektiğini tekrar hatırlatalım. Buzdolabı şerbetin şekerlenmesine sebep olacağından, şerbeti oda sıcaklığında bekletmelisiniz.
- Şerbet yaparken her zaman için su ile şekerin karıştığından tam anlamıyla emin olmanız gerekmektedir.
Künefe Hazırlama Aşaması
- Fırınınızı öncesinde ısıtmalı ve daha sonrasında künefeyi fırına vermelisiniz. 250 ya da 300 derece ile ısıtmış olduğunuz fırına yine derecesini bozmadan künefenizi koyun ve 10 ila 15 dakika kadar iyice kızarmasını beklemelisiniz. Yine aynı şekilde künefe tavada da kızartılabilir. Fakat sıcaklığını korurken soğutmuş olduğunuz şerbeti dökmeyi ihmal etmemelisiniz.
- Künefe kişinin isteğine göre farklı tatlar kullanılarak da servis edilebilmektedir. Örneğin üzerine dondurma, kaymak, fıstık da dökerek bu şekilde servis edebilirsiniz. Şerbetli tatlı olmasından dolayı özellikle kaymak ve dondurma künefenin lezzetini iki katına çıkaran tatlardır.
- Künefe hazırlarken dikkat edilmesi gereken bir diğer nokta ise, kişi sayısı kadar porsiyonlar hazırlamalısınız. Fazla yapıldığı zaman tadında kısa zamanda değişiklikler meydana gelebildiği için yapıldığında direkt olarak tüketmeye elverişli bir tatlıdır.
