Mor lahana, kendine has rengi ve özel tadından dolayı salatalarda sık sık tercih edilmektedir. Salata ve mezelerde kullanılan mor lahana ne yazık ki direkt kullanıldığında sert bir yapıya sahip olduğundan dolayı hoş bir tada ve görüntüye sebep olmaz. 1-)Mor Lahanayı Doğrayın
Bu aşama mor lahananın hızlı bir şekilde yumuşamasını sağlayan aşamadır. Mor lahanayı ne kadar ince şekilde kıyarsanız o kadar hızlı yumuşamasını sağlarsınız.
Mor lahanayı ince ince kıyma işlemini gerçekleştirdikten sonra hızlıca suyundan kurtulunuz. Bu işlemi elinizde mor lahanaları sıkarak da gerçekleştirebilirsiniz.
2-)Tuz Ekin
Mor lahanaları ince ince kıyıp sularını süzdükten sonra bol miktarda tuzlamak lahananın hızlı bir şekilde yumuşamasını sağlamaktadır.
Burada bol miktarda tuzu dökün ve eliniz ile kıyılmış mor lahana parçalarını ovalayın. Bu işlemi ne kadar çok yaparsanız lahana parçaları o kadar çok yumuşar.
Bu aşamada lahananın renginde bir açılma söz konusu olabilir. Bu çok normaldir. Hatta lahanaların yumuşadığını rengindeki açılmadan da anlayabilirsiniz.
3-)Limon Kullanın
Mor lahanaları doğradıktan sonra limon ya da limon suyu kullanarak da yumuşamasını sağlayabilirsiniz. Limon içerisinde bulunan asidik yapıdan dolayı sıkça tercih edilir ve limon ile lahana parçalarını ovarsanız hızlıca yumuşamasını sağlarsınız.
Bu aşamada limon suyu ile ovduktan sonra tuz ekleyebilir ve ovma işlemine o şekilde devam edebilirsiniz. Her ovma işleminden sonra servis etmeden önce lahanalara zeytinyağı ilave ediniz ve zeytinyağı içerisinde bir süre beklemesini sağlayınız.
