Siyah Zeytin Tatlandırma Nasıl Yapılır?
Siyah zeytinlerin tatlandırmasında yapılan işlemler genelde zormuş gibi anlatılsa da aslında oldukça pratiktir. Neredeyse zeytin turşusu yapmaya benzer fakat daha az vakit alıcı bir işlemdir. Belki de tatlandırma işleminin en zor kısmı olarak kolaylıkla beklemesi diyebiliriz. Çünkü zeytinin cinsine göre değişiklik gösterse de, bu bekleme süresi bazen 1 ay bazen 2,5, 3 ay sürebilmektedir.
Siyah Zeytin Tatlandırma Nasıl Yapılır?
- Yukarıda da bahsetmiş olduğumuz gibi zeytini tatlandırmak oldukça kolaydır. Burada öncelikle zeytinlerinizin miktarına göre büyük bir kavanoz veya bidon temin etmeniz gerekmektedir. Daha sonrasında ölçü 2 kepçe zeytine 2 yemek kaşığı tuz olacak şekilde ayarlanmalıdır. Yani bidona öncelikle iki avuç ya da kepçe zeytin koyduktan sonra 2 yemek kaşığı tuz ilave etmelisiniz. Bu işlem kavanozunuzu doldurana kadar devam etmelidir.
- Kavanoz ya da bidon dolduktan sonra ise, 1 çay kaşığı sirke ya da limon, bir çay bardağı kadar yağ ve 1 yemek kaşığı kadar toz şeker ilave etmelisiniz. Bu şekilde bidonun kapağını kesinlikle hava almayacak şekilde kapattıktan sonra her gün bidonu yuvarlayarak bu karışımın iyice iç içe geçmesini sağlamalısınız. İşte burada işin içine yukarıda da bahsettiğimiz zor kısım giriyor. Yani bekleme süresi. Bu bekleme süresi tuzun miktarına göre 3 ay kadar sürebildiği gibi 1 ayda da zeytinleriniz tatlanabilmektedir.
- Bu bekleme esnasında tuzun tamamen erimesi oldukça önemlidir. Bu süreçte zeytinleriniz renk değiştireceğinden herhangi bir şekilde endişe edecek bir durum söz konusu değildir. Zeytinleriniz bekledikçe kendiliğinden rengi siyaha dönecektir.
Zeytin Tatlandırırken Dikkat Edilmesi Gerekenler Nelerdir?
- Zeytinleri toplarken mümkün olduğunca diri ve sert zeytinleri toplamaya özen göstermelisiniz. Hatta tatlandırma işleminde kullanacağınız zeytinlerin de yumuşak olmamasına bilhassa dikkat etmeniz gerekmektedir.
- Zeytini tatlandırma işleminde kullanacağınız tuz miktarı oldukça önemlidir. Koyacağınız tuz miktarı bekleme süresini de kısacağından zeytinlerinizin daha çabuk tatlanmasını sağlayacaktır.
- Kullanacağınız bidonların temizliği, zeytinlerinizin sağlıklı bir şekilde tatlanması açısından oldukça önemlidir. Bu yüzden zeytinleri tatlandırmak için kullanacağınız bidonu kullanmadan önce iyi bir şekilde yıkamalısınız. Fakat bu temizliği yaparken asla kimyasal ürünler tercih etmemelisiniz.
- Kullanacağınız tuzun iyotlu olmadığından emin olun. Aynı şekilde evde günlük olarak tükettiğimiz tuzların haricinde olan, zeytin için rahatlıkla kullanabileceğiniz tuzları tercih edin ve tuzu almadan önce ise satıcıya muhakkak sorarak almalısınız.
- Zeytinlerinizi yıkarken ya da salamura yaparken kullanacağınız suyun içilebilir olmasına bilhassa özen göstermeniz gerekmektedir. Tüketmeden önce zeytinleri musluktan akan su ile değil 10 ila 15 dakika kadar içilebilir suyun içerisinde bekletebilirsiniz.
