Yaş Maya Nasıl Saklanır?
Çoğunlukla hamur işleri için kullanılan mayanın aslında kullanım alanı oldukça geniştir. Öncelikle mayalar kendi içlerinde çeşitlilik gösterir. Bunlar ekşi maya, kuru maya ve yaş maya olmak üzere 3 çeşittir. Yapılarına göre farklılık gösteren bu mayalar birbirlerine yerine kullanılabilecek olsalar da ayrı ayrı kullanım alanları vardır.
Bunun nedeni ise her mayanın kendine has farklı bir tadı olmasıdır. Kullanmak istediğiniz maya yerine farklı bir çeşit maya kullandığınızda elde etmek istediğiniz ürün aynı olurken tadında farklılıklar meydana gelir. 3 çeşit mayadan biri olan yaş mayalar ise bu çeşitliliğin en kısa ömürlü olan çeşididir. Kuru maya oldukça uzun süreler dayanabilirken yaş bayanın kullanım ömrü genellikle birkaç gün ile sınırlıdır. Fakat bu durum normal şartlar için geçerlidir. Farklı saklama yöntemleri kullanarak yaş mayayı bozulmadan uzun süre saklayabilirsiniz. Yaş maya raf ömrü kısa bir besin olduğu için 2 farklı şekilde saklanabilir. Bu yöntemlerden biri ile yaş mayayı aylarca saklamanız mümkün.
Yaş Maya Saklama Yöntemleri
1-)Buzdolabında Saklama
Yaş maya kısa ömürlü ve hassas besinlerden olduğu için kesinlikle dışarıda tutulmamalıdır. Paketini açmadan buzdolabının içinde üzerinde yazan son kullanma tarihine kadar rahatlıkla saklayabilirsiniz. Ancak bu noktada siz paketi açmamış dahi olsanız paketi kontrol etmeden dolaba koymamaya özen gösterin. Yaş maya bozulmaya uygun bir besin olduğu için kesinlikle hava ile temas etmemeli. Hava ile temas etmesi durumunda mayanın içinde bulunan besinler hava ile tepkimeye girerek mayanın bozulmasına neden olur.
Bu durum ise mayanın üzerinde meydana gelen renk değişimleri ile ortaya çıkar. Eğer yaş maya paketinizde herhangi bir açıklık fark ederseniz mutlaka önlem almalısınız. Bunun için paketi delinmiş olan yaş mayanızı bir buzdolabı poşetine koyarak ağzını sıkıca bağlayabilirsiniz. Bunu yaparken içindeki tüm havanın çıktığından emin olduktan sonra yapın. Buzdolabı poşeti kullanmak istemiyorsanız cam bir saklama kabı yardımı ile de buzdolabınızın içine koyabilirsiniz.
2-)Buzlukta Saklama
Genellikle yaş mayaların buzlukta saklanmaması gerektiği söylenir. Yaş maya paketlerinin üzerinde de buzlukta saklamayınız gibi uyarılar bulunur. Ancak buzlukta saklamanın sağlık açısından hiçbir sakıncası yoktur. Bunun tek nedeni aşırı soğuk ve uzun süreli saklanma koşullarından kaynaklı mayanın alındığı tarihteki kadar etkili sonuçlar vermeyecek olmasıdır.
Ancak bu değişikliğin oranı o kadar küçük düzeylerde olur ki evlerde yaş maya kullanarak yapılan ürünlerde bu farkı anlamak mümkün değildir. Bu nedenle paketin tamamen kapalı olduğundan emin olduğunuz yaş mayalarınızı buzlukta rahatlıkla saklayabilirsiniz. Ambalajı kesilmiş, açılmış ya da yırtılmış olan yaş mayaları ise buzdolabı poşetine içine koyarak içindeki tüm havayı çıkardıktan sonra sıkıca bağlayarak saklayabilirsiniz. Renginde, kokusunda bir değişim hissetmediğiniz sürece tüketebilirsiniz.
