1-)Haşlayarak Saklayın
Bu işlemi yapmak için öncelikli olarak patlıcanları istediğiniz şekillerde kesiniz. Kesme işleminden sonra patlıcanları önce bol suda yıkayınız ve ardından hiç zaman kaybetmeden sıcak su içerisinde bir süre bekleyerek haşlayınız.
Burada yaptığınız haşlama işleminin tam olmamasına dikkat ediniz. Aksi takdirde yemek yapımı esnasında patlıcan aşırı pişmekten dolayı dağılabilir.
Haşlama işleminin ardından patlıcanların bir süre beklemesini bekleyin. Bu işlem için haşlanan patlıcanları hiç zaman kaybetmeden soğuk su içerisine koyarak uygulayabilirsiniz. Burada soğuk su içerisine buz koyarak etkiyi arttırabilirsiniz.
Bu işlem patlıcanın görüntüsünün de bozulmadan saklanmasını sağlamaktadır. Patlıcanların soğutulmasının ardından hiç zaman kaybetmeden buzdolabı poşetlerine istediğiniz miktarlarda koyarak ağzını kapayıp dondurucuya koyunuz.
2-)Tuzlayarak Saklayınız
Bu işlem patlıcanın renginin kararmadan saklanmasını sağlamaktadır. Burada yapmanız gereken patlıcanları istediğiniz boyutlarda doğrayın. Doğradığınız patlıcan dilimlerine bol miktarda tuz ekeleyin ve buzdolabı poşetlerine koyarak saklayınız.
Bu aşamada çabuk kararan patlıcanlarda yıkama işlemi esnasında bir süre patlıcan dilimlerini limon içeren ılık su içerisinde bekletiniz. Bu işlemin ardından patlıcanları tuzlamanız daha etkili bir sonuç verecektir.
NOT: Dondurucudan çıkardığınız patlıcanları eridikten sonra mutlaka kullanınız. Kullanmadığınız eriyen patlıcanları kesinlikle geri dondurucuya koymayınız.
