Ayva reçeli kolay yapılan ama kesinlikle ayvanın mevsiminde yapılması gereken bir reçeldir. Eğer mevsiminde olmayan ayvalar ile yapıldığında reçel oldukça tatsız olabilmektedir.
Ayva Reçeli Nasıl Yapılır? Püf Noktaları Nelerdir?
Kullanılacak Malzemeler:
- 2 kg ayva,
- 5 su bardağı su,
- 1 adet limon suyu,
- 8,5 su bardağı şeker,
- Ayva çekirdekleri.
Yapılışı:
- Yukarıda da belirttiğimiz gibi öncelikle ayvayı mevsiminde tüketmeye özen göstermelisiniz. Mevsiminde aldığınız ayvaları ise güzel bir şekilde yıkadıktan sonra, yumuşaması için bir süre haşlamanız gerekmektedir.
- Ayvalar yumuşadıktan sonra, küp küp olacak şekilde ayvalarınızı doğrayın. Daha sonrasında ise ayvalarınızı 1 parmak geçecek şekilde tencerenin içine su doldurup tekrar haşlıyorsunuz.
- Haşlanma işlemi geçtikten sonra ise ocağın altını kapatıp şekeri ekliyoruz. Şekerin tamamen ıslanmış olmasına dikkat etmeniz gerekiyor. Eridikten sonra ise tekrar kaynatmalı ve çekirdekleri de tam olarak bu aşamada eklememiş gerekmektedir. Çekirdekleri kullanırken çekinmenize gerek yok, çekirdekler aslında reçelin kıvamını almasında yardımcı olmaktadırlar.
- Bu şekilde yaklaşık yarım saat kısık ateşte reçelin kaynamasını beklememiz gerekiyor. Bu esnada köpüklenmeler meydana gelecektir, o köpükleri de tahta kaşık yardımıyla hafifçe üzerinden almanız gerekmektedir.
- Reçel koyulaşmaya başlayınca ise limon suyunu ekleyip, on dakika daha kaynatıp ocağı kapatabilirsiniz.
- Reçelinizin kavanozlara döktükten sonra kavanozların ağzını kapatmamaya özen gösterin. İlk önce reçeliniz soğusun ondan sonra kavanozların kapağını kapatın. Aksi takdirde ısı ile kapatılan kapakları soğuduktan sonra açmak daha zor olmaktadır.
Reçel Yaparken Dikkat Edilmesi Gerekenler Nelerdir?
- Ayvanın çürük olmamasına dikkat etmeniz gerekmektedir. Çürük olan ayvalarda reçel tam olarak kıvamına ulaşamamaktadır.
- Reçel yaparken daima tahta kaşık kullanmaya özen göstermelisiniz. Metal kaşık kullanmak da reçelin lezzetini ve kıvamını etkileyebilmektedir. Bu oldukça hassas bir dip nottur.
- Reçel yaparken şeker kullanmaktan çekinmeyin. Reçel tatlı bir gıda olduğu için şeker oranını az tutmanız, reçeli tüketmenizi güçlendirir.
Reçelde Şekerlenme Nasıl Önlenir?
Ayva reçelini saklarken buzdolabında muhafaza etmekten kaçınmalısınız. Buzdolabında muhafaza edilmiş olan reçeller direkt olarak şekerlenmeye başlayacaktır. Bu yüzden oda sıcaklığında, serin, kuru ve rutubetsiz bir alanda hava almayacak şekilde muhafaza etmeniz gerekmektedir.
Reçeliniz şekerlendiyse bunun da bir çözümü var! Öncelikle bir tencere içine su doldurmanız gerekmektedir. Daha sonrasında bu tencerenin ağız kısmını kapatacak genişlikte bir tencere daha üstüne koyarak içine de kavanozu ile birlikte reçelinizi koyun. Ocağın altını açtıktan su kaynamaya başlayacak ve çıkan buhar reçelinizin eski kıvamına dönmesini sağlayacaktır. Bu yöntem buhar yöntemi olarak geçmektedir. Yine şekerlenmeyi önlemek için uygulayabileceğiniz bir diğer yöntem ise reçeli tekrar kaynatmaktadır. Reçelinizi bir tencere içine alın ve kaynamaya başlarken içerisine limon damlatın. Sonrasında tekrar kavanozlarına yerleştirebilirsiniz. Böylece şekerlenmeyi de engellemiş olursunuz.
NOT: Reçelin uzun süre soğuk ile temas etmesi reçelin şekerlenmesine sebep olacaktır. Yukarıda da belirttiğimiz gibi, reçelinizi kesinlikle buzdolabında muhafaza etmeyin.
