Et Kavurmanın Püf Noktaları
- Öncelikli olan, etin, kendi saldığı suyun kullanılmasıdır. Bu et suyunda, lezzet veren vitamin ve mineraller bulunmaktadır. Etin ilk haşlandığı su kullanılmadığında, hem etin kıvamı sert, hem de lezzeti daha az olacaktır.
- Etin saldığı suyun kullanılabilmesi için etler kuşbaşı olarak doğranarak çok az yağ ile tavaya konulmalı, ardından kısık ateşte hafifçe pişmeye bırakılmalıdır.
- Etin ilk ateşe konulduğu anda tuzlanması, piştiğinde sert olmasına yol açar ve ağızda dağılan bir özelliğe sahip olmaz. Tuzun en son ayarlanması ve eklenmesi ise et ile tuzun bütünleşmemesine, tuzun, et içine tam anlamıyla nüfuz etmemesine yol açacağı için tavsiye edilmemektedir. Bunun yerine tuzlama işlemi, ocağa konulduktan kısa bir süre sonra yapılmalıdır.
- Genellikle çelik tencere yerine tabanı yapışmaz özelliğe sahip olan teflon, seramik ya da granit bir tencere / tava kullanılması önerilmektedir.
- Et suyunu saldıktan sonra ocağın ateşi tamamen açılmamalı, orta ateşte pişime devam edilmelidir. Aksi halde et, saldığı tüm suyu çekebilir ve dikkat edilmezse yanabilir.
- Son olarak, etin genel olarak kendi bünyesinde yağ bulunduğu için ekstra yağ eklenmesi gerekmez. Özellikle kıyma halindeki etlerde ya da kırmızı et pişiminde bu noktaya bilhassa dikkat edilmelidir.
Sade Et Kavurma Nasıl Yapılır?
Genellikle kırmızı et, sade bir şekilde kavrulduğunda son derece lezzetli olmaktadır. Ancak bazı dikkat edilmesi gereken noktalar yine mevcuttur. Sade et kavurmasına, kekik, karabiber gibi bazı baharatlar eklenerek daha leziz bir kıvamda tüketilmesi de sağlanabilmektedir.
Sade et kavurması yapılırken, etler çok büyük olmayacak şekilde kuşbaşı olarak doğranır ve tavaya konur. Bu aşamada yağ konulması gerekmez. Etler tavaya konduktan sonra üzerine bir su bardağı kadar su eklenir ve etler pişmeye bırakılır. Bu aşamada etin altı orta ateşte yanmalıdır.
Tavadaki et, suyunu iyice çekene kadar ara ara karıştırılır ve her tarafın eşit şekilde pişmesi sağlanır. Suyunu çeken etlerin üzerine bir yemek kaşığı ölçüsünü geçmeyecek şekilde sıvı yağ eklenir ve karıştırılmaya devam edilir. Ardından yağlı ve suyunu çekmiş et üzerine isteğe bağlı olarak karabiber ve kekik eklenir, tuz da uygun zamanda eklenir ve bir iki dakika daha karıştırılarak pişirilir. Daha sonra arzu edildiği şekilde servis yapılabilir.
