Lezzetli tatlar denemeyi seven kişilerin tercih ettiği sebze kurutma işlemlerinde en çok görülen ürünler arasında patlıcan, biber, kabak, fasulye gibi ürünler yer almaktadır. Kurutulmuş fasulye ile kavurma yapmak mümkündür. Biber, patlıcan vb. sebzeler ile dolmalar hazırlayabilir, bunları soğuk yemek olarak tüketebilirsiniz.
Sebzeleri kurutmak için en çok uygulanan işlem güneş altında kurutma ile yapılabilmektedir.
Güneş altında kurutmadan önce sebzelerin tamamı yıkanmalı ve saplar ayıklanmalıdır. Çürük olan sebzeler de ayrıldıktan sonra iğne yardımı ile tüm sebzeleri kalın bir ipe asmanız gerekmektedir. Asılan sebzeleri balkon vb. yerlerde direkt güneş ile temas etmeyecek şekilde en az 1 hafta bekleterek kurutma işlemlerini yerine getirebilirsiniz. Direkt güneş teması ürünlere zarar vereceği bu şekilde bir yöntem uygulanması uygun değildir.
Kurutulmuş Sebzeler Nasıl Saklanmalı?
Kışın çoğu sebze olduğundan çok daha pahalıdır ve genellikle bu sebzeleri bulmak zor olmaktadır. Kışın yemek yapmakta zorlanan ev kadınlarının uyguladığı yöntem ise yazın alınan sebzelerin saklanmasıdır. Bu şekilde saklanan sebzeler kışında kullanılabilmekte ve ev kadınlarını her gün yemek yapma derdinden büyük oranda kurtarmaktadır.
Kurutulmuş olan sebzeleri saklamak için en iyi kullanım yeri derin dondurucu olacaktır. Hava almayacak biçimde poşetlenmiş olan kurutulmuş meyvelerinizi yıl boyu tüketebilir, yemeklerinizde kullanabilirsiniz. Kurutulmuş sebzeleri poşetin yanı sıra cam kavanozlarda ya da tamamen deliksiz kaplar içinde de saklayabilirsiniz. Kurutulmuş sebzelerin zarar görmemesi için serin ve kuru bir yerde muhafaza edilmesine dikkat edilmelidir.

Kurutulmuş sebzeleri yemeklerinizde kullanabilirsiniz. Özel bir misafiriniz olduğunda kurutulmuş kabak, patlıcan ve biberlere iç hazırlayarak dolma yapabilir ve sofranızı donatabilirsiniz. Kurutulmuş sebzeler arasında yer alan fasulye ile ise kavurma yapabilirsiniz. Çok lezzetli olan fasulye kavurması yerine yumurtalı fasulye de yapabilir ve farklı lezzetler deneyebilirsiniz. Kurutulmuş meyveleri ise direkt olarak tüketebilirsiniz.
