Patlıcan soğan gibi acı bir tada sahip bir sebze türüdür. Patlıcanı pişirmeden önce bu acı tadını yok etmek çok daha uygun bir işlem olacaktır. Patlıcanın acı tadını yok etmek için uygulanabilecek belirli yöntemler bulunmaktadır. Bu yöntemlerin bazıları aşağıda maddeler halinde anlatılmıştır. Dilediğiniz yöntemi tercih edebilir ve kullanım yapabilirsiniz.
- Patlıcanın acısını çıkarmak için kullanabileceğiniz ilk yöntemlerden birisi tuzlu su içinde bekletmek olacaktır. Tuzlu su içinde patlıcanları 20 ile 25 dakika arasında bekletmeniz patlıcanların tuzunu alacak bir yöntem olacaktır.
- Patlıcanın acısını çıkarmak için tuzlu su içinde bekletme esnasında patlıcanların kabuğunu soymaya da özen göstermeniz gereklidir. Bu şekilde patlıcanlar daha hızlı bir biçimde tatlanacaktır.
- Patlıcanların kızartma için kullanacaksanız tuzlu su içinde beklettiğiniz, soyulmuş patlıcanları kurulamadan tavaya atmamanız gereklidir. Bunun için önce suda bekletilen patlıcanları havlu kağıt ile kurulayabilir sonrasında da temizleyebilirsiniz.
Patlıcan Kebabı Tarifi
Gerekli Malzemeler:
- 3 tane patlıcan,
- 800 gram kıyma,
- 2 tane soğan,
- 1 yumurta
- 1 diş sarımsak,
- 1 tane soğan,
- Bayat etmek,
- Salça,
- Bir miktar tereyağı,
- Tuz, karabiber ve pul biber.
Yapılışı:
- Öncelikle kuru soğanları ince ince doğrayın.
- Sonrasında bir kabın içine belirli miktarda kıymayı alın ve üzerine doğranmış soğanları ekleyin. Kıymanın içine sonra tuz, karabiber, pul biber, yumurtayı ekleyin.
- Bayat ekmekleri hafifçe ıslatın ve sonrasında kıymalı karışımın içine ekleyin. Karışımı eliniz ile iyice karıştırdıktan sonra içine rendelenmiş sarımsakları ekleyin. Karıştırmaya devam edin.
- Daha sonrasında patlıcanları ince ince biçimde doğrayın. Sonrasında patlıcanların aralarına kıyma karışımını ekleyerek fırın tepsisine dizin.
- Fırını 200 derece ölçüde ayarlayın ve 20 dakika patlıcanları pişirin.
- Tavada tereyağı ve salçayı eritip son olarak patlıcan kebabının üzerinde gezdirin.
