Salçanın Küflenmemesi İçin Ne Yapılmalı?
Salça, domates veya biberin çeşitli işlemlerden geçirilerek kaynatılıp tercihen de konserve şeklinde saklanarak hazırlanması ve yemeklere tat ve renk vermek amacı ile değerlendirilmesi için kullanılır.
Evde yapılabileceği gibi marketlerde de satılan ve hazır olanları genellikle eve yapılandan daha az dayanıklı olan salçaların saklanması için birtakım noktalara dikkat etmek gerekir. Çünkü salça yapısı gereği bozulmaya ve küflenmeye yatkın bir gıda maddesidir.
En temelde dikkat edilmesi gerek nokta elbette satın alınan salçanın son tüketim tarihinin yakın olup olmadığına ve güvenilir bir marka olup olmadığına dikkat etmektir. Ardından evinize aldığınız salçanızı uzun süre bozulup küflenmeden kullanabilmeniz için dikkat etmeniz gereken konular devreye girer.
Salçanın Küflenmesi Nasıl Engellenir?
1-)Büyük Olmayan Cam Kaplarda Saklayın
En başta uygulamanız gereken şey, evinizdeki salçayı eğer çok büyük bir kapta aldıysanız bunu küçük cam kaplara bölmeniz olacaktır. Aldığınız kap büyük olmasa bile eğer salçayı teneke kutu içerisinde aldıysanız direkt bir cam kaba aktarmalısınız ki muhafaza etmeniz daha sağlıklı ve güvenli olsun. Bu sayede salçanız her açılışta hava aldığında tüm salçanız değil, kısa sürede kullanabileceğiniz miktarda cam kavanoza aktardığınız salça etkilenmiş olacak. Salçanın bozulmasına imkan kalmadan tüketmiş olacağınız için küflenme sorunuyla karşılaşmayacaksınız. Bu kapları mutlaka buzdolabında saklamayı unutmayın.
2-)Salçanın Üstüne Yağ Koyun
Eğer her kullanışınızda salçanızın tepesine salçayı tamamen kapatıp hava almasını önleyecek şekilde zeytinyağı ya da ayçiçek yağı koyarsanız bu da küflenme sorununu önleyecektir. Temiz bir kaşık yardımıyla aldığınız her salçadan sonra salçanızı kaşığın tersiyle düzeltip üzerine yağ koyarsanız hava ile teması engellemiş ve küflenmesini önlemiş olursunuz. Yemeklerde kullanacağınızda bu yağ için endişe etmenize gerek yoktur. Yüzeydeki yağı kaşıktan süzerek veya süzmeden de salçayı alıp yemeğinize koyabilirsiniz.
3-)Salçaya Kaya Tuzu ve Zeytinyağı Karıştırmak
Salçanızı aldıktan sonra bir tencereye koyup (eğer salçanız kısa sürede bitiremeyeceğiniz kadar çok ise) içine bir miktar kaya tuzu ve her kilogram salça için bir bardak zeytinyağı koyarak iyice karıştırıp kaynamaya bırakın. Bu işlem salçanızın daha uzun süre kullanılabilmesini ve küflenmesinin engellenmesini sağlayacaktır. Bilindiği gibi tuz besinlerin bozulmasını önlemek için öteden beri kullanılan bir malzemedir. Siz de salçanız için tuzlama işlemini yapabilirsiniz. Ardından kaynattığınız salça soğuduktan sonra cam bir kaba koyup buzdolabına kaldırabilirsiniz. Yine kullanacağınız kadar salçayı ayrıca bir cam kavanoza alıp buradan kullanmayı unutmayın ki salçanız her seferinde havayla temas etmesin.
