Turşum Yumuşak Ne Yapmalıyım?
Turşu içeriğindeki fazla tuz miktarına bağlı olarak yumuşak olabilmektedir fakat yumuşak olan bir turşu maalesef sertleştirilemez. Sadece turşunuzu yaparken koyduğunuz malzemeleri daha çok dikkat ederek böyle bir durumun tekrarlanmasını engelleyebilirsiniz.

Turşuyu beklemesi gereken süre boyunca beklettikten sonra sert olduysa buna çözüm bulunabilir fakat yumuşamış olan turşu için maalesef yapılabilecek çok bir şey yoktur.
Turşu kullanılan malzemeler, bekleme süresi ya da yapılışındaki yanlışlıklardan dolayı erimiş ya da fazla yumuşamış bir şekilde olabilmektedir. Biraz önce de söylediğimiz gibi yumuşamış turşuya ekstra malzeme katarak ya da biraz daha bekleterek toparlamanız mümkün değildir. Fakat daha sonraki denemeleriniz de daha dikkatli olmanız gerekmektedir.
Turşu Yaparken Dikkat Edilmesi Gerekenler
1-)Malzeme Seçimi
Eğer salatalık turşusu yapacaksanız, seçtiğiniz salatalıklar mevsiminde, sert ve çürüksüz olmalıdır. Eğer yumuşak ve çürük salatalıklar tercih ederseniz, turşunuz da istediğiniz gibi sert olmayacaktır. Hatta yumuşak salatalıklar kullanmanız, turşu kurduktan sonra salatalıkların erimesine sebep olacaktır.
Turşuda kullanacağınız sebzeler için yapılabilecek bir diğer yöntem ise, turşuya başlamadan önce sebzeler yıkandıktan sonra bir iğne yardımıyla sebzeleri delerseniz içerisine turşu suyu gireceğinden daha sert ve kütür kütür bir turşunuz olacaktır.
Malzeme seçiminde önemli bir diğer nokta da tuz seçimidir. Kullanacağınız tuz mümkün olduğunca iri taneli kaya tuzu olmalıdır. Kaya tuzu kullanılmış turşular her zaman daha lezzetli bir tada sahiptirler. Turşunuza tuz eklerken miktarı az tutmamaya dikkat etmelisiniz. Tuzun az gelmesi turşunun yumuşamasına sebep olacaktır.
2-)Malzemelerin Miktarı
Turşu kurarken yine çok sık rastlanılan hatalardan biri de malzemenin az ya da fazla konulmasıdır. Öncelikle, eğer ilk kez turşu kuracaksanız bu malzemeleri doğru bir ölçüde koymak adına muhakkak daha önce turşu yapan birinden elde ettiğiniz ölçülere göre yapmanızı öneririz. Göz kararı davranmak çoğu zaman kötü bir şekilde sonuçlanabilmektedir.
3-)Kullanılan Su
Turşunuzu kurarken, lezzetli olması açısından her zaman suyu önce kaynatın ve daha sonra soğutun. Suyu bu şekilde kullanmanız, turşunuzun lezzetli olmasını sağlayan temel maddelerden biridir.
4-)Kullanılan Kap
Turşu kurarken önemli bir diğer detay ise turşunun kurulacağı kaptır. Eğer küçük bir turşu kuracaksanız kullandığınız kavanozun cam olması hem sağlık açısından hem de turşu için daha doğru bir seçim olacaktır. Daha büyük bir turşu kuracaksanız ise büyük plastik bidonlardan yardım alabilirsiniz.
Turşu Nasıl Saklanmalıdır?
Turşu eğer yeni kurulmuş ise buzdolabında değil oda sıcaklığında muhafaza edilmesi gerekmektedir. Bu aşamada kavanozun kapağı kesinlikle açılmaması gerekmektedir. Turşu eğer oluşum aşamasında sürekli hava ile temas ederse düşündüğünüz gibi lezzetli olmayacaktır. Fakat eğer turşu olmuş ve tüketmeye başladıysanız ise buzdolabında saklamanız daha doğru olacaktır. Eğer ki büyük bidonlarda turşu kurduysanız bir kere açıp, tüketeceğiniz miktarda turşu suyu ve turşuları başka bir kavanoza alarak, asıl büyük bidondaki turşunuzu çok sık açıp kapama ve buzdolabına sığdırma derdinden de kurtulabilirsiniz.
