İstiridye Mantarı Nasıl Saklanır?
Pleurotaceae ailesine ait olan istiridye mantarının latince adı ise pleurotus’dur. İstiridye mantarı halk arasında en yaygın kullanılan isim olsa da istiridye mantarına aynı zamanda kavak mantarı ve kayın mantarı da denilmektedir. Birçok faydası bulunan istiridye mantarının başlıca faydalarını içerdiği vitaminler sayesinde kanser hastalarının enfeksiyon kapma riskini azaltma, bağışıklık sistemini güçlendirme olarak sayabiliriz.
Bunun yanı sıra protein açısından da oldukça zengin bir besindir. Kırmızı ete oranla istiridye mantarında 2 kat daha fazla miktarda protein bulunmaktadır. Bu nedenle vejeteryanlar için de oldukça etkili bir besin olmaktadır. Tüm bu özelliklerinin ve faydalarının yanı sıra ise istiridye mantarı oldukça lezzetli bir mantar türüdür.
Ülkemizin ekolojik koşulları nedeni ile de avrupaya göre ülkemizde istiridye mantarı iki kat daha fazla üretilebilmektedir. Ancak ülkemizde mantar konusunda çeşitli korkuların yaşanması nedeni ile tüketimi Avrupaya oranla çok daha düşüktür. Bu korkuların yaşanmaması için ise öncelikli olarak istiridye mantarının hangi koşullarda saklanması gerektiğini bilmek gerekir. İstiridye mantarını saklamak için dikkat edilmesi gereken birkaç mühim nokta bulunmaktadır.
İstiridye Mantarı Nasıl Muhafaza Edilir?
1-)Kese Kağıdı Kullanarak Saklama
Kese kağıdı istiridye mantarını uzun süre saklayabilmek için yapılması gereken bir işlemdir. Kese kağıdı kullanarak istiridye mantarını saklamak için buzdolabında muhafaza etmeniz gerekir. Ancak çok daha uzun süre muhafaza edebilmek için derin donduruculardan ya da buzluklardan yardım almanız gerekir.
Kese kağıdı kullanarak istiridye mantarını saklamak için satın almış olduğunuz ya da toplamış olduğunuz mantarları kese kağıdının içerisine koymanız gerekir. Daha sonra kese kağıdının ağız kısmını iyice kapatarak mantara dolabın kokusunun geçmesini önleyin. Bu şekilde istiridye mantarını 9 güne kadar saklayabilirsiniz.
2-)Karton Kullanarak Saklama
Karton kullanımı da istiridye mantarlarının daha uzun süre dayanmasına olanak sağlar. Bu yöntemi de kese kağıdı yöntemi gibi uygulayabilirsiniz. Öncelikle mantarları karton bir kutunun içine özenle yerleştirin. Böylece mantarların birbirlerine zarar vermelerini önlemiş olursunuz. Daha sonra buzdolabına karton kutuyu yerleştirerek 10 güne kadar rahatlıkla muhafaza edebilirsiniz.
NOT: İstiridye mantarı 2 ila 5 derece arsında muhafaza edilmesi gereken bir besindir. Oda sıcaklığında kalması durumunda 24 saat içerisinde tüketilmelidir.
