Aşırı Ekşi Turşuyu Nasıl Kurtarabilirim?

1-)Su Ekleyin
Turşunuzun olduğu kap içerisindeki suyu yarıya kadar boşaltın ve temiz su ile tuz ekleyerek baştan turşu suyu elde edin. Böylece turşunuzun ekşiliği de olması gereken kıvama dönecektir. Fakat bu uygulamayı yaparken oldukça dikkatli olmanız gerekmektedir. Genel olarak tuz miktarı az kalırsa turşunuz eriyebilir, fazla olursa aynı işlemi tekrarlamanız gerekebilir. Bu yüzden su ve tuz oranlamasını iyi yapmak gerekmektedir.
2-)Tekrar Turşu Kurun
Çoğu kişinin bilmediği ya da yapmaktan çekindiği bu yöntemde de su eklemekten daha fazla zaman harcanmaktadır fakat etkili bir sonuçtur.
Burada öncelikle kap içerisindeki turşuları ayrı bir kap içerisine alarak, hangi sebzeden turşu yapacaksanız onları yıkayıp hazırlamalı ve boş olan turşu suyu kabına yerleştirmelisiniz. Yani aslında olan turşu suyu ile baştan turşu kuracaksanız. Salatalık, lahana, biber artık hangi malzemeyi ekleyeceğiniz size kalmış. Bir bölümü yeniden kurduktan sonra ayrı bir kap içerisinde bekleyen turşularınızı da üstte kalacak şekilde yerleştirin. Böylece aşırı limon ya da sirkeyi yeni koyduğunuz salatalıklar emecektir.
Turşu Aşırı Tuzlu Olduğunda Ne Yapılmalıdır?
1-)Lahana Doğrayın
Lahana turşudaki tuz miktarını dengelemek için kullanabileceğiniz sebzelerden biridir. Burada öncelikle lahanaları çok küçük olmayacak şekilde doğramanız gerekmektedir. Daha sonrasında ise hepsini aynı anda koymayacak şekilde lahanaları turşu bidonunun içine koyun. Altlara doğru gitmesi oldukça önemlidir bu yüzden uzun bir çubuk ya da şiş yardımıyla lahanaları aşağıya doğru itmelisiniz. Bir süre bu şekilde bekledikten sonra turşunuzun tuzu olması gerektiği hale gelecektir.
2-)Havuç Doğrayın
Yine yukarıda yazmış olduğumuz gibi, turşunun içine lahana yerine havuç hatta patates de koyarak tuz oranını dengeleyebilirsiniz. Fakat burada özellikle havuçlarınızı jülyen şeklinde doğrarsanız, daha kısa sürede sonuç almanıza yardımcı olacaktır.
Turşu Yaparken Dikkat Edilmesi Gerekenler Nelerdir?
- Turşuyu limon ya da sirke kullanarak yapmak tamamen sizin damak zevkinize kalmıştır. Fakat şu bilinmelidir ki, limon ya da limon tuzu yanlışlıkla fazla konulduğu zaman turşunun ekşiliği aşırı miktarda olabilir. Fakat sirkede çok aşırı miktarda koymadıkça, ekşiliği rahatsız edici boyuta uzanmamaktadır.
- Tuz, limon, su oranlamasını her zaman doğru bir şekilde ayarlamak gerekmektedir. Turşunuz yukarıda da belirttiğimiz gibi aşırı tuzlu ya da ekşi olabilir.
