1-)Kuru Maya ile Mayalama
Kuru maya kullanarak ekmek hamuru hazırlamak istiyorsanız yapmanız gerekenler oldukça kolaydır. Ekmek hamuru hazırlarken maya olarak sıklıkla kuru maya kullanılmaktadır. Bu aşamada uygun koşullara dikkat ederek hamurun hazırlanması ekmeğin kalitesi açısından oldukça önemlidir. Bu nedenle mayayı ekmek hamuruna ilave edeceğiniz zaman da önemlidir.
Bunun için kullandığınız tarifteki mayanın kullanım sırasına dikkat edin. Ekmek hamuru hazırlarken kuru maya kullanmayı tercih ediyorsanız eğer hamur hazırlarken kullanacağınız un miktarının %1,5’u kadar kuru maya kullanmanız gerekir. Bunun için en ideal sonucu mutfak tartıları vermektedir. Ancak mutfağınızda bulunan tabak, bardak, kaşık gibi malzemelerden faydalanarak da bu oranı göz kararı da ayarlayabilirsiniz.
2-)Yaş Maya ile Mayalama
Ekmek hamuru hazırlarken kullanılabilecek maya çeşitlerinden bir diğeri de yaş mayadır. Yaş mayanın kullanım ömrü çok kısa olduğu için sıklıkla tercih edilen bir maya olamamasına karşın ekmek yapımında kullanılmaktadır.
Bunun için kuru maya miktarına daha fazla miktarlarda yaş maya kullanılır. Bu oranı belirlemek için en önemli nokta kullanacak olduğunuz un miktarıdır. Unlar kalitelerine göre ağırlık açısından da fark göstereceği gibi alcağı su miktarı açısından da farklılık göstermektedir.
Bu noktada unun ağırlığını dikkate alarak işlem yapmakta fayda vardır. Yaş maya ile verilen ekmek tarifleri aksi belirtilmediği sürece 1 paket yaş maya için hazırlanmıştır. Bu nedenle ılık bir su hazırlayın ve 1 paket yaş mayayı bir kasenin içine alarak üzerine ılık suyu dökün.
Daha sonra bir kaşık ya da çatal yardımı ile mayayı ezerek homojen bir karışım oluşturun. Kaseye suyu eklerken ölçerek ilave edin ve daha sonra hamura koymanız gereken su miktarından mayaya koyduğunuz miktarı çıkararak işleme devam edin.
