Evde Yoğurt Mayalamanın Püf Noktaları
Ev yoğurdu sağlık açısından son derecen faydalı bir besindir. Yapılan araştırmalar, günlük olarak tüketilen yoğurdun kalp hastalıkları riskini büyük oranda azalttığını ortaya koymaktadır. Yoğurt yapımı esasında son derece kolay bir işlemdir ancak bazı püf noktalarının iyi bilinmesi gerekir. Bu sayede hem doğal hem de taze yoğurt tüketmek olanağı ortaya çıkacaktır.
Yoğurdun Mayalanması
Yoğurdun mayalanması esnasında, kullanılacak olan sütün çok taze ve katkısız olması gerekmektedir. En lezzetli ve kıvamı en güzel olan yoğurtlar, bu şekilde elde edilen sütler ile yapılmaktadır. Bunun için taze inek sütü kullanılabilir.
Yoğurdun mayalanma aşamaları ise şu şekilde gerçekleştirilmelidir:
- İlk olarak sütün tamamını alacak büyüklükte bir tencere alınır ve süt içine boşaltıldıktan sonra ocak yüksek ayarda yakılır.
- Kaynama noktasına doğru giden süt yavaş yavaş kabaracak ve köpükleri yükselecektir, bu nedenle bu aşamada dikkatli hareket etmek gerekir. Kabarmaya başladıktan sonra pişmekte olan süt bir kepçe yardımı ile havalandırılmaya başlanır.
- Havalandırma işlemi, kepçe ile alınan bir miktar sütün biraz yukarıdan yeniden tencereye boşaltılması işlemidir. Bu işlem en az 5 dakika boyunca devam ettirilmelidir. Havalandırma işlemi, yoğurdun yüzeyinde kalın bir kaymak tabakası oluşması bakımından çok önemlidir. Bu işlem sırasında taşmayı önlemek adına ocak orta ateşe getirilebilir.
- Havalandırma işleminden sonra süt bir süre daha kendi halinde kaynamaya bırakılmalıdır, bu süreç yoğurdun çok daha sert olmasını sağlayacaktır.
- Kaynama işleminden sonra sütün soğuması gerekir. Ardından mayalama işlemine başlanır.
Mayalanma Isısının Ayarlanması
Pişirilmiş olan sütün mayalanabilmesi için uygun bir sıcaklığa sahip olması gerekir. Süt çok sıcakken yapılan mayalama işlemi, yoğurdun çok ekşi olmasına, süt soğukken yapılan mayalama işlemi ise yoğurdun tutmamasına neden olacaktır.
Mayalama işlemi için sütün ısısının ayarlanmasına gelince;
- İlk olarak süt iyice soğuduktan sonra ocağa konmalı ve ılık bir duruma getirilmelidir. Bu ılıklık derecesi eli ne yakacak ne de yakmayacak derecede olmalıdır.
- Eller normal sıcaklığa sahipken, süt parmağı yakmıyor ancak hafif bir ılıklık hissi veriyorsa, mayalama işlemine hazır demektir.
- Hafifçe ısınan sütün içine, mayalık olması için ayrılan yoğurt iyice çırpıldıktan sonra eklenir. Ancak bu işlem sırasında sütün yüzeyinde oluşan kaymak bozulmamalıdır. İçine yoğurt eklendikten sonra yoğurt 6 – 7 saat boyunca mayalanmaya bırakılır. Bu süreçte tencerenin dış kısmına sofra bezi ve battaniye sarılmalıdır.
Mayalama İşleminde Püf Noktalar
- Mayalama işlemi sırasında mayanın en iyi şekilde tutması için yağlı süt kullanılmalıdır. Ayrıca kış aylarında dış kısmındaki bezle kapatma işlemi daha kalın şekilde yapılmalıdır.
- Yaz mevsiminde mayalanmaya bırakılan yoğurdun dışı çok fazla örtülürse sulanma oluşabilir. Aynı zamanda yoğurt ekşiyebilir. Mayalama için kullanılan yoğurt ev yoğurdu olursa, sütte daha iyi mayalanacaktır. Hazır yoğurtlar, elde edilen yoğurtta sünme sorunu oluşmasına neden olabilir. Yoğurt çok cıvık olmuş ise bu durumun bir nedeni de sütü alınan ineğin beslenme şeklidir, bu detay da unutulmamalıdır. İnek çok fazla yeşillik tüketmiş ise yoğurt da cıvık bir kıvama sahip olacaktır.
- Mayalanmaya bırakılan sütün içine çok az miktarda şeker eklenmesi, mayalanma sürecini hızlandıracaktır. Yeni yoğurda başlandığı sırada, bir miktarı ayrılmalı ve bir sonraki mayalama işlemi için hazır bulundurulmalıdır. Bu, bir sonraki yoğurdun da ekşi olmamasını sağlayacaktır.
