Hazır Yoğurttan Maya Olur mu?
Eski zamanlardan günümüze kadar yoğurt Türk toplumunun vazgeçilmez bir gıdası olmuştur. Halkımız birbirinden farklı şekilde yaptıkları gibi neredeyse her öğünde ve her yemeğin içinde bulundurmuşlardır. Yoğurdun pilavdan sarmalara, makarnadan dolmalara, köftelerden kızartmalara birçok yemeğin yanında vazgeçilmez bir tat olmasının haricinde sağlık açısından faydaları da oldukça fazladır. Kilo probleminden tansiyon rahatsızlığına, B12 vitamini eksikliğinden sindirim yolları enfeksiyonlarına kadar birçok hastalığa karşı etkin olan yoğurdun yapımında en önemli nokta da mayası olmaktadır.
Evde Yoğurt Nasıl Yapılır?
- Yoğurt yapımında mayadan önce en önemli etken süttür. Aldığınız süt ne kadar kaliteli olursa yapacağınız yoğurdun tadı da ona göre o kadar güzel olacaktır. Bu yüzden güvendiğiniz bir yerden süt almanız iyi olacaktır.
- Aldığınız sütü öncelikle bir tülbent veya süzgeçten geçirerek tencereye alın. Sütü tencereye aldıktan sonra kaynatmaya başlayın. Sütü ara sıra karıştırarak 10 dakika kadar kaynatın. Süt kaynamaya başladıktan sonra köpürdüğünde ocağı en düşük seviyeye alarak 7-8 dakika daha kaynatın.
- Süt kaynadıktan sonra sütü ocaktan alarak biraz ılımasını bekleyin. Mayalamaya uygun olduğunu anlamak için parmağınızı süte batırın 10’a kadar sayın. Eğer sıcaklık dayanabileceğiniz bir orandaysa, süt mayalanmaya hazır demektir.
- Süt mayalanırken maya miktarını 1 litreye, 1 kaşık maya olarak ayarlayabilirsiniz. Mayayı süte katmadan önce bir kabın içine mayayı ekleyin ve sütten biraz dökün. Maya ve sütü karıştırın. Daha sonra elde ettiğiniz bu karışımı sütün içine dökerek sütü karıştırın.
- Karıştırma işleminden sonra tencereyi bir sofra beziyle veya mutfak bezleriyle hava almayacak şekilde sarın. Sütü oda sıcaklığında 5 ila 6 saat arasında mayalanmaya bırakın. Mayalandıktan sonra yoğurdunuzu tüketebilirsiniz ve buzdolabında saklayabilirsiniz.

Evde yoğurt yapmak isteyen herkesin ilk olarak aklına gelen hazır yoğurdun maya olarak kullanılıp kullanılmayacağıdır. Yoğurt mayası nasıl olursa yoğurdun da öyle olacağı herkes tarafından bilinir. Çoğu kişi ev yoğurdundan maya bulamadığı için hazır yoğurtları maya olarak kullanmayı tercih etmektedir. Elinizde ev yapımı yoğurttan maya bulunmadığı takdirde hazır yoğurttan şu şekilde yoğurt mayalayabilirsiniz:
- Sütü yukarıda anlatıldığı gibi kaynatarak bir kabın içine alın.
- Kaynayan sütten aldığınız bir kepçe sütü ve hazır yoğurttan bir tam dolu yemek kaşığı yoğurdu kabın içine ekleyin.
- Karıştırmadan önce biraz tuz ve bir çay kaşığı şeker ekleyin.
- Bunun yanında birkaç damla limon ekleyin.
- Daha sonra yukarıda anlattığımız şekilde yoğurdunuzu mayalayabilirsiniz.
Yoğurt mayalarken önemli olanın süt olduğunu da belirtmiştik. Market sütleri işlemden geçtiği için zararlı bakterilerin yanında yoğurt yapmaya yarayacak yararlı bakterilerin de ölmesine neden olmaktadır. Bunun için yoğurdunuzu ya güvendiğiniz bir sütçüden alın ya da günlük pastörize edilmiş kutu sütleri kullanın.
