İnstat maya, normal mayalara benzeyen, fakat çok daha uzun süre kullanışlı bir maya türüdür. Bu maya, evlerde rahatlıkla kullanabileceğimiz gibi hamur işlerinde de normal mayaların daha üzerinde kabarmayı sağlamaktadır.

Fakat hazır mayaların genetiğinde değişiklikler yapıldığı ve içerisine uzun süre saklanmasını sağlamak için koruyucu maddeler eklendiğinden içerisindeki vitamin ve minerallerin etkisi yok denecek kadar azalmaktadır.
Ev Yapımı Maya Nasıl Yapılır?
- Eğer sağlık açısından mayanızı evde kendiniz hazırlamak istiyorsanız, malzemeler oldukça basittir. Bu malzemeler; taze buğday unu, tuz ve sudur.
- Maya hazırlarken öncelikle bir su bardağı kadar unu, çay bardağı kadar su ve birkaç tutam tuz ile iyice karıştırın. Bu karışımı küçük bir kap içerisine alıp üzerine herhangi bir saç, tüy düşmemesi için ince bir tül ile kapatın ve iki gün oda sıcaklığında bu şekilde dinlendirin. İkinci günün sonunda hamurda ekşimsi bir koku ve görüntüsünde ise kabarcıklar veya çatlaklar meydana gelmiş olması gerekmektedir. Eğer maya bu şekilde ise yine bir bardak un ve bir çay bardağı su ile yoğurarak tekrar 1 gün dinlendirmeniz gerekmektedir.
- 3. günün sonunda ise yine kontrol etmeniz gerekmektedir. Maya hala ekşi kokuyorsa ve görüntüsü yine çatlaklı ise bu sefer de 2 su bardağı un ve 2 çay bardağı su ile karıştırılıp tekrar yoğurulur. Yine aynı şekilde bir gün daha dinlendirildikten sonra mayanız kullanıma hazırdır. Maya yapımında bekletmek çok önemlidir ve 5 gün idealdir.
Maya Yaparken Dikkat Edilmesi Gerekenler Nelerdir?
- Mayanın hazırlanış aşamasındaki kokusu ekşidir. Fakat bu ekşi koku kötü bir koku değildir. Eğer hazırladığınız mayanın kokusunda bozulma kokusu gibi bir koku varsa, kullandığınız malzemelerden dolayı bozulmalar meydana gelmiş olabilir. Tüketmemelisiniz.
- Maya yaparken kullandığınız malzemelerin kullanım tarihlerine dikkat etmelisiniz. Özellikle unun taze olması oldukça mühimdir. Un da bayatlama varsa, mayanız da istediğiniz gibi olmayacaktır.
- Mayayı bekletmiş olduğunuz ortamın ısısı da oldukça önemlidir. Çok sıcak bir ortamda bekletiyorsanız mayanız tutmayacaktır. Eğer soğuksa fazla sertleşecektir ve yine olması gereken kıvamda olmayacaktır. Bu yüzden en fazla 18-19 derece olacak şekilde, kuru bir yerde muhafaza etmeye özen göstermelisiniz.
