Mantar Nasıl Saklanır?
Mantar oldukça sağlıklı besinlerin başında yer alır. Çünkü mantar birçok açıdan oldukça yüksek değerlere sahiptir. Mantar saklamak oldukça kolay bir işlemdir. Bunun için tek yapmanız gereken ise doğru yöntemler kullanmaktır.
Mantar Nasıl Muhafaza Edilir?
1-)Çiğken Saklama
Mantarı çiğden saklama çok sık tercih edilen bir yöntem değildir. Çünkü mantar su oranı yüksek besinlerden biridir ve dondurulduğu zaman içindeki su da donmaktadır. Bu durum çözüldüğü zaman mantarın yumuşamasına neden olurken mantarın saklanma süresini de 3-4 aya kadar indirir. Ancak bu süre içinde tüketmeyi planladığınız mantarlar için ve yer sıkıntınız olmaması durumda rahatlıkla uygulayabilirsiniz. Bunun için mantara kesinlikle su değdirmemeniz gerekmektedir. Su ile temas ettirmeden mantarlarınızı temizleyin.
Bunun için üzerindeki toprak kalıntılarını fırçalayabilirsiniz. Daha sonra kullanmayı düşündüğünüz şekilde porsiyonlara bölerek buzdolabı poşetlerine ya da saklama kaplarına yerleştirerek buzluğa atabilirsiniz.
2-)Kavurarak Saklama
Bu yöntemi uygulamak için öncelikle mantarlarınızı iyice yıkayın ve kurulayın. Daha sonra istediğiniz şekilde keserek mantarlarınızı hazırlayın. Ardından bir tavanın içerisine çok az miktarda yağ ilave edin. Bu yağın miktarı mantarların tavaya yapışmasını engelleyecek kadar olmalıdır. Yeterli miktarda yağı tavaya koyduktan sonra mantarları da tavaya alın ve kısa bir süre kavurun. Mantarlarınızın tam olarak pişmesini beklemenize gerek yok. Mantarlarınız bir süre kavrulduktan sonra soğumaya bırakın ve uygun bir kabın içine alarak buzlukta rahatlıkla saklayın.
3-)Konserve Yaparak Saklama
Mantarlarınızı konserve yaparak saklamanız da mümkündür. Bu yöntemi uygulamak için öncelikle mantarlarınızı iyice temizleyin ve ardından haşlayın. Haşlamadan önce mantarlarınızı kullanmak istediğiniz yemeğe uygun şekillerde kesin. Haşlama işlemi ile birlikte mantar içinde bulundurduğu suyu da kaybedecektir. Bu şekilde hazırlamış olduğunuz mantarları kavanozlara doldurun. Ancak kavanozların üstü 2-3 cm kadar boş bırakılmalıdır.
Daha sonra tuzlu su ile kavanozları tamamen doldurun. Ardından kavanozların kapaklarını su içinde iyice kaynatın ve bu kapaklar soğumadan kavanozları sıkıca kapatın. Kavanozların kapakları alta gelecek şekilde kavanozları çevirerek soğumasını bekleyin.
