Pastırma Çiğ Yenir mi?
Pastırma, Türk kültüründe önemli bir yere sahip olan besinlerdendir. Özellikle uygun koşullarda üretilen ve satışa sunulan pastırma, hem oldukça lezzetli hem de sağlığa yararlıdır. Pastırma yapma aşamasında ısıl işlem uygulanmaz ancak pastırma yine de pişmiş ettir. Nasıl mı? Hayvanın uygun bölümlerinden pastırma için alınan etler günlerce tuza yatırılır. Ardından baharatlarla ovularak iyice baharatlarla pişmesi sağlanır.
Son olarak, kuruması için “çemen” adı verilen baharatla yapılmış bir gıdaya sarılır ve asılır. Pastırma bu şekilde günlerce askıda kalır ve tüm bu süreç boyunca baharatlara maruz kaldığı için de pişer. Üstelik oldukça lezzetli bir tada sahiptir. Sandviçlerde, omletlerde, börek içinde ya da kuru fasulye gibi etle pişirilen yemeklerde oldukça lezizi bir ziyafet sunar.
Çiğ Pastırma Zararlı mıdır?
Pastırma genel olarak çiğ şekilde tüketilir. Ancak elbette yağda yumurtanın içine konduğunda ya da yemeklere eklendiğinde bir miktar pişirilerek de tüketilebilir. Anlaşıldığı kadarıyla pastırmanın ısıl işlemlere maruz kalmadan tüketilmesinin herhangi bir zararı bulunmamaktadır. Ancak bazı koşullarda elbette ki pastırmanın zararlarından söz edilebilir:
- Üretimi sağlıksız bir ortamda ve sağlıksız koşullarda yapılan pastırma, sağlık açısından ciddi risk barındırır.
- Pastırmanın yapım aşamasında et tam kurumuş halde değilse, sindirim sistemi ve midede çeşitli sorunlara ya da iç organlarda bakteri oluşumuna yol açabilir.
- Pastırmanın dışına sürülen çemende bulunan tuz miktarı, tansiyon rahatsızlığı olan kişilerde tansiyonun yükselmesine neden olabilir. Aynı şekilde kolesterol dengesi de bu sebeple bozulabilir.
- Daha çok dana etinden yapılmış pastırmanın tercih edilmesi önerilmektedir. Bazı yerlerde ne yazık ki sağlıksız ve beklemiş etlerle de pastırma üretimi gerçekleştirilebilmektedir. Bu nedenle pastırmanın üretim koşullarından emin olunmalı ve bu gibi yerlerden satın alınmalıdır.
- İçinde baharatlardan başka hiçbir katkı maddesi olmayan pastırma, dikkat edilmediğinde bakterilerin üremesine çok müsait bir besindir.
- Aşırı miktarda tüketimi alerjik durumlara ya da sindirim sorunlarına yol açabilir.
Pastırma Yararlı mı?
Özellikle çiğ olarak tüketildiğinde sağlık açısından oldukça yararlı olduğu bilinen pastırmanın, dışına kaplanan çemen de aynı şekilde yararlıdır. Besin değerlerini kaybetmemiş olduğu için sıklıkla tüketilmeye uygun bir gıdadır. İçeriğinde hayli kalori bulunduğu için vücuda enerji verir. Aynı şekilde katkı maddeleri kullanılmadığı için vücuda pastırma tüketimi sonucunda herhangi bir kimyasal madde girişi söz konusu olmamaktadır.
Çok işlenmemiş bir gıda olduğu için kolesterol seviyesinde etkisi hayli azdır. Kötü kolesterolün oluşmasını da engeller. Çemenden arındırılarak tüketildiğinde tansiyon hastalarına, kalp hastalarına ve böbrek hastalarına iyi geldiği tespit edilmiştir. Ayrıca bağırsaklarda ve midede oluşan gazlara da engel olmaktadır. Sindirim sistemini düzene sokar ve çalıştırır.
