Pekmezin Bozulduğu Nasıl Anlaşılır?
Birçoğumuz pekmezin bozulmadığını düşünürüz. Ancak pekmezinde bir gıda olduğunu düşünürsek bozulması daha mantıklı geliyor. Diğer gıdalara oranla oldukça uzun süre sonunda bozulan bir gıdadır. Pekmezin bozulmasında en çok etki gösteren şey ise saklanma koşulları. Yanlış saklanma koşulları pekmezin kolay bozulmasına neden olur. Nemli, rutubetli ve sıcak ortamlarda saklanan pekmezler hava koşuları nedeni ile bozulan pekmezlerdendir. Bu şartlarda pekmezlerde bakteri oluşumu başlar. Diğer bir yandan ise açılan pekmez olabildiğince kısa sürede tüketilmelidir. Tek bir şeye bakarak pekmezin bozulduğu anlaşılamayacağı gibi zaman alan yöntemleri de bulunmamaktadır.
1-)Üzerine Bakarak Bozulduğunun Anlaşılması
Pekmezler genellikle üzümden yapılmalarına rağmen oldukça koyu kahverengi bir renge sahiptir. Hatta o kadar koyu renklidir ki siyah gibi gözükür. Ancak bu pekmezin üzerinde köpüklenmeler oluşmaya başlamış ise pekmez de bozulmaya başlamış demektir. Bu köpükler pekmezin tüm yüzeyini kaplamış ise pekmez tamamen bozulmuştur ve tüketilmemesi gerekir. Pekmezin üzerinde oluşan bu köpükler açık kahverengi ya da koyu sarı tonlarında olur. Oluşan bu köpükler de bakteri üretmeye başlar ve pekmezi bu şekilde bozar.
2-)Rengine Bakarak Bozulduğunun Anlaşılması
Pekmezin rengi tüketilebilirliği açısından oldukça fazla ipucu verir. Bu neden ile pekmezin rengine bakarak bozulup bozulmadığını anlamak oldukça kolaydır. Bozuk olmayan pekmezin rengi siyah renk ile karıştırılabilecek kadar koyu bir kahverengidir. Pekmez bozulmaya başladığında rengi açılmaya başlar. Ne kadar açık renkli ise o kadar çok bozulmuş demek olur. Bunu anlamanın en güvenilir yolu ise bir kaşığı pekmeze batırın. Batırdığınız kaşığı çektiğinizde kaşıkta olması gerekenden daha açık bir renk kaldıysa pekmez bozulmuş demektir. Üzüm ve dut pekmezleri için geçerlidir.
3-)Dibine Bakarak Bozulduğunun Anlaşılması
Pekmez tamamı ile akışkan bir yapıya sahiptir. Yapımında uygulanan işlemler nedeni ile dibinde bir miktar tortu bulunur. Ancak bu tortu pekmez alındıktan kısa bir süre sonra pekmezin dibine oturacaktır. Pekmez bozulmaya başlayana kadar da aynı seviyede kalmaya devam eder. Pekmez bozulmaya başladığında ise bu tortu kalınlaşmaya başlar. Tortunun kalınlığının artması pekmezin bozulma yüzdesi ile doğru orantılıdır.
