Sütün Bozulduğunu Nasıl Anlarız?
Süt özellikle protein oranı oldukça yüksek bir besindir. Bunun yanı sıra sütün içerisinde bulunan besin ögelerinin sayısı oldukça fazladır. İnsan vücuduna birçok faydası bulunduğu için her yaşta her dönemde tüketilmesine özen gösterilmelidir. Özellikle bebeklerin ve gelişim çağındaki çocukların tüketmesi çok daha kalıcı ve yüksek oranlarda faydaların ortaya çıkmasına neden olur. Yetişkin insanlarda ise kemik erimesi gibi hastalıkların önüne geçmek için doğal bir kalkan görevi üstlenir. Bunlar ve çok daha fazlası gibi birçok yarar sağlayan sütün ömrü ise oldukça kısadır.
Süt çabuk bozulan ve bozuk tüketildiği zaman sağlık sorunlarına neden olan bir besin maddesidir. Bu nedenle sütün bozulup bozulmadığına çok dikkat edilmeli birkaç noktaya dikkat edilmelidir.
1-)Kıvamına Bakarak
Süt, normal şartlar altında homojen ve oldukça akıcı olan bir sıvıdır. Ancak bozulmaya başladığı andan itibaren kıvamı yoğunlaşmaya başlar. Hatta bozuk olarak saklanma süresi arttıkça bu kıvam yoğurt kıvamına doğru kayma gösterir. Bunun yanı sıra bozulduğundan şüphe ettiğiniz sütü kısık ateşte ısıttığınız zaman dibe çöküyor ve topaklanma meydana geliyorsa bu sütün bozulduğunu anlayabilirsiniz.
2-)Kokusuna Bakarak
Süt, uygun saklanma şartları sağlanmadığı takdirde çok daha kısa sürede bozulur. Böyle durumlarda sütün kokusu oldukça belirleyeci faktörlerden biri olur. Eğer sütünüz bozulmuş ise mutlaka kokusu da değişmiştir. Ahır kokusunu veya balık kokusunu anımsatan bir koku alıyorsanız, sütün bozulduğunu rahatlıkla anlayabilirsiniz.
3-)Renk Değişimine Bakarak
Süt içinde bulunan bakteriler yüzünden kısa ömürlü besin maddelerinden biridir. Bu bakteriler sayesinde de uzun süre tüketilmeyen ve açık kalan sütler de bakteriler sütün bozulmasına neden olur. Bu nedenle bozulduğunu anlamak için ise sütün rengine bakmak gerekir. Normal şartlarda beyaz olan süt bozulmaya başladığında öncelikle biraz sarılaşmaya başlar.
Daha sonra ise gitgide mavimsi ve kırmızımsı renk almaya başlar. Bu gibi renk farklılıkları gözlenen sütler kesinlikle tüketilmemelidir. Aksi halde ciddi sağlık sorunlarına yol açabilir. Ayrıca bakteriler sütün yüzeyinde köpürmeye de neden olur. Dolapta bekleyen sütün üzeri köpüklenmiş ise bozulmuş demektir.
4-)Tadına Bakarak
Son olarak tadına bakarak sütün bozulduğunu anlayabilirsiniz. Bozulan sütün tadında da belli değişimler oluşur. Eğer süt ekşileşmeye ve acımsı bir tat almaya başlamış ise bozulmuş demektir ve bu süt kesinlikle tüketilmemelidir.
