Brokoli Sararınca Bozulur mu?
Brokoli sararması, brokolinin uzun bir süre beklemesi sonucunda görülen bir sorundur. Brokoli ülkemizde en çok sevilen ve tüketilen yeşillik türlerinden birisidir. Açık bir yeşil renge sahip olan brokoli sofralarımızın baş tacı ürünlerinden birisidir. Brokoli tüketimi yapabilmek için yeşil renkli, sararmamış bir brokoli satın almak en uygun seçim olacaktır. Brokoli çok lezzetlidir ve besin değeri de oldukça yüksektir. Brokoli satın alırken sararmış yapraklara sahip olanlardan uzak durmak tavsiye edilmektedir.
Brokoli, lahanagiller familyasına ait olan ürünlerden birisidir ve ana vatanı İtalya’dır. İtalya dışında daha birçok farklı yerde yetişme imkanı olan brokoli bol miktarda karoten içeren bir üründür. Uygun fiyata satılan brokoli, market ve mahalle pazarlarında satılan bir sebze çeşitidir.
Brokoli Neden Sararır?
Marketlerde, pazarlarda satılan brokolilerin bazı bölümlerinin sarardığı görülebilir. Brokolinin sararmasının en büyük sebebi bitkinin hücrelerinin parçalanmasıdır. Brokoli bilindiği üzere birçok farklı enzim parçalarından oluşan bir üründür. Bu ürünler brokolinin parçalanmasına ve sonrasında da sararmasına neden olmaktadır. Brokoli içinde yer edinmiş olan enzimlerin glukosinolatlar ile birleşmesi sonucunda brokolinin ana yapısı bozulur ve dağılır. Bu bileşemlerin etkeninin azalması brokolinin dış görünümünde değişikliklere, sararmalara neden olmaktadır.
Sararmış Brokoli Tüketmek Zararlı mıdır?
Brokolinin kendi yapısında meydana gelen değişimler sonucu görülen brokoli sararması besin değerlerinin kaybolmasına neden olmaktadır. Bu gibi nedenler sebebiyle brokolinin sararmamış olanlarının tercih edilmesi ve brokolinin sararmasının önüne geçilmesine dikkat etmek gereklidir. Sararmış olan brokoliyi çorbalarınıza ya da yemeklerinize katarak değerlendirme şansı elde edebilirsiniz.
Brokoli Nasıl Saklanır?
Brokoliyi saklamak için buzdolabını kullanmak en ideal seçim olacaktır. Buzdolabında saklanacak olan brokolilerin öncelikli olarak kuru olması gereklidir. Islanmış olan brokoliler kısa süre içinde bozulacağı için ıslatılmaması ya da ıslandıysa bile kağıt havlu ile kurulanması gerekmektedir. Bunun için brokoliyi cam kavanoz içinde ağzı kapaklı bir biçimde buzdolabı içinde muhafaza etmek mümkün olacaktır. Brokoli bu şekilde 1 hafta kadar kullanılabilecektir. 1 hafta sonrasında ise brokolinin tüketimi sağlık açısından uygun olmayacaktır ve tavsiye edilmez.
