Közlemiş olduğunuz patlıcan, biber gibi sebzeleri doğru bir şekilde soymak için ilk yapmanız gereken, közlendikten hemen sonra cam bir kap içerisine almalısınız. Daha sonrasında kabın kendi kapağı olsa dahi üzerini streçleyip 15 dakika kadar bekletmelisiniz. Böylece hem ısısı biraz daha düşecek hem de buharlanacağı için kabuklar yumuşayacak. Böylece normalden daha kısa bir süre içerisinde ve kolayca kabukları soyabilirsiniz.
Közlenmiş Patlıcan Nasıl Saklanır?
Közlenmiş patlıcanları saklamak için uygulayabileceğiniz iki yöntem bulunmaktadır.
- Yöntem 1: Kabuklarını soyduğunuz patlıcanları daha sonrasında küçük parçalar haline getirerek porsiyonlara ayırıp buzdolabı poşetlerine yerleştirerek buzdolabınızın dondurucu kısmında rahatlıkla muhafaza edebilirsiniz. Her gıdada olduğu gibi, patlıcanların saklandığı tarihi poşetin üzerine not ederseniz, tüketmeden önce bozulup bozulmadığı hakkında da fikir edinmiş olursunuz.
- Yöntem 2: Bu yöntemde ise yine patlıcanların kabuklarını soyduktan sonra cam kavanoz içinde saklayabilirsiniz. Eğer patlıcanları uzun süre muhafaza etmek istemiyorsanız ve sık sık tüketecekseniz, cam kavanoz içinde saklamak hem sağlık açısından hem de daha fazla patlıcan koyabileceğinizden oldukça ideal bir yöntem olacaktır.
- Kavanoz yönteminde yapabileceğiniz bir diğer şey ise yine közlenmiş patlıcanları kavanoza koyduktan sonra içine birkaç tane soyulmuş sarımsak ve kavanozun üzerinde 3 parmak boşluk bırakacak miktarda kaya tuzu da eklemenizi istiyoruz. Kalan boşluğu da zeytinyağlı ile doldurup kavanozun kapağını sıkı bir şekilde kapatın. Kavanozun sızdırmadığından veya hava almadığından emin olduktan sonra, 10 dakika kadar su içinde kavanozları kaynatın ve daha sonra soğumaya bırakın. Böylece aynı marketten hazır aldığınız gibi, hatta daha lezzetli olan közlenmiş patlıcanınız hazır! 😊
Her gıdada olduğu gibi, patlıcanları muhafaza ederken de sık sık hava ile temasından kaçınmanız gerekiyor. Patlıcanları saklamak için kullandığınız poşetlerin yırtık olması veya kavanozun bir şekilde hava geçirmesi, patlıcanların muhafaza ömrünü de oldukça azaltacaktır.

- Yine patlıcanın bozulup bozulmadığını anlamamıza yardımcı olabilecek bir diğer belirti ise tadıdır. Bazen kokusunda bir problem fark etmeyebilirsiniz ya da kokudan anlamayabilirsiniz. Bu gibi durumlarda çatalın ucuyla patlıcanın tadına bakarak herhangi bir problem olup olmadığını da rahatlıkla anlayabilirsiniz.
- Közlenmiş patlıcanın iyi bir şekilde muhafaza edilmemesi durumunda, yine karşılaşacağımız durumlardan biri küflenmesidir. Özellikle uzun süre açık bir şekilde oda sıcaklığında beklemişse zaten bakteriler üremeye başladığından, görüntüsünde ya da tadında bir problem olmasa bile tüketmemenizi öneriyoruz. Eğer küflenme belirtileri varsa yine kesinlikle tüketmekten kaçınmalısınız.
