Kültür Mantarının Bozulduğu Nasıl Anlaşılır?
Mantar tüm dünyada oldukça sevilen bir besin türüdür. Ancak mantarlar da kendi içlerinde oldukça fazla sayıda cinse ayrılmaktadır. Ülkemizde en çok bilinen ve tüketilen mantar cinsi ise agaricus bisporus cinsidir. Halk arasında kültür mantarı olarak bilinen bu mantar cinsi sıklıkla tüketilen bir mantardır ve kendi içinde de iki gruba ayrılmaktadır. Bu grup ayrımına neden olan nokta ise mantarların erginliğidir.
Kültür mantarının küçük olanları beyaz mantar olarak adlandırılırken büyük ve ergin olanları ise portabello olarak adlandırılmaktadır. Bu farkın oluşmasına neden olan durum ise farklı yetişme sürelerinin ardından toplanıyor olmalarından kaynaklı olarak bazı vitamin ve mineral seviyelerinin değişmesidir.
Haşlanmış portabello mantarında potasyum, C vitamini, magnezyum ve demir oranları beyaz mantara göre daha yüksektir. Bazı farklılıklar olsa da her ikisi de kültür mantarıdır ve saklanma koşulları açısından aynı özellikleri sağlamak gerekir. Aynı şekilde bozulma şekilleri de aynıdır. Kültür mantarının bozulduğunu anlamak için dikkat edilebilecek birkaç nokta bulunmaktadır.
Kültür Mantarının Bozulduğu Nasıl Anlaşılır?
1-)Renk Değişimi
Kültür mantarının bozulup bozulmadığını anlamanın en kolay yolu renk değişimi yöntemidir. Uygulaması oldukça kolay olan bu yöntem için mantar yüzeyinin dikkatli bir şekilde incelenmesi gerekir. Bunun için kültür mantarının şapka kısmına bakılır. Şapka kısmı beyaz renkte olan kültür mantarı bozulmaya başladığında şapkasında kahverengiye dönük renk değişimleri gözlemlenir. Bunun yanı sıra nokta şeklinde ya da benek şeklinde yine kahverengi lekelenmeler meydana gelir. Bu durumlar ile karşılaşıldığı zaman o mantarlar tüketilmemelidir.
2-)Koku Değişimi
Koku kültür mantarının bozulması konusunda en etkili yöntemlerden birisidir. Kültür mantarlarının geç bozulması için taze olarak alınması oldukça önemlidir. Taze kültür mantarı üzerinde toprak kokusu bulunur. Ancak kültür mantarları bozulmaya başladıkça üzerlerindeki toprak kokusu yavaş yavaş kaybolmaya başlar ve daha sonrasında bu koku yerini amonyağı anımsatan ağır bir kokuya bırakır.
Toprak kokusunun kaybolmaya başladığı mantarlar bozulmaya başlamış demektir ve amonyak gibi kokmaya başlayan mantarlarda artık tamamen bozulmuş demektir. Bu tarz mantarlar kesinlikle tüketilmemelidir.
3-)Özellik Değişimi
Özellik değişimi mantarların bazı değişimlere uğramasını ifade eder. Bunlar yumuşama, yapışkanlık ve sulanmadır. Taze ve sağlıklı olan mantarlar sert, kuru ve mattır. Ancak bozulmaya başlayan mantarda öncelikli olarak yüzeylerinde parlamaya neden olan yapışkan bir madde oluşumu başlar. Daha sonra mantarlara dokunduğunuz zaman mantarların yumuşadığını fark edersiniz ve bu yumuşamadan kaynaklı olarak da sulanmalar meydana gelir.
NOT: Kültür mantarı ülkemizde gıda zehirlenmelerinin en çok yaşandığı besinlerden birisidir. Bu nedenle tüketimi sırasında oldukça dikkat edilmelidir. Zehirlenmelerin çoğu zehirli mantar tüketiminden kaynaklansa da bozuk mantar tüketimi de buna etki etmektedir.
