Kuru fasulye her ne kadar basit bir tarif ile yapılıyor olsa da, dikkat edilmesi gereken ince detayları bulunmaktadır. Bu detaylardan en bilineni, fasulyenin gazlı bir bakliyat olmasından kaynaklı, yapılmadan önce ıslatılmasıdır.
Kuru fasulye yaparken dikkat edilmesi gereken bir diğer detay ise kabuklarıdır. Kimi insan için bu kabuklarının ayrılması ya da ayrılmaması çok sorun olmasa da, kimi insan buna daha dikkat etmektedir. Peki kuru fasulyenin kabuklarının çıkmasını nasıl engelleyebiliriz? Bunun ile alakalı olarak size iki yöntemden bahsedeceğiz.
- Kuru fasulyeyi pişirmeden önce, gazını alması açısından 1 gece bekletmek üzere ıslatıyoruz. Bu ıslatma evresinde kuru fasulyenin içerisine bir miktar tuz atarak kabukların dağılmasını önleyebilirsiniz.
- Kuru fasulyeyi ıslattıktan sonra suyunu süzüp haşlama evresinde de yine bir çay kaşığı karbonat döküp haşlayabilirsiniz. Böylece kabukları dağılmadan rahatlıkla kuru fasulyenizi pişirebilirsiniz.
Kuru Fasulye Pişirirken Uygulayabileceğiniz Püf Noktalar
- Kullandığınız fasulye, salça gibi malzemeler mümkün olduğunca taze olmalıdır. Bu malzemelerin herhangi birinde bir bozulma söz konusu ise bu direkt olarak kuru fasulyenin tadını da etkileyecektir.
- İspir fasulyesi dediğimiz fasulye türü, lezzet açısından daha farklı ve dışarıdaki restoranlarda sık sık tercih edilen bir fasulye türüdür. Daha iyi pişmesi ve güzel bir görüntü olması açısından ispir fasulyesi tercih edebilirsiniz.
- Kuru fasulyeyi pişirmeden evvel öncesinde muhakkak ıslatmanız gerekmektedir. Gazlı bir bakliyat olmasından dolayı, daha sonrasında kişileri rahat edebilmektedir bu yüzden ıslatmak oldukça önemlidir.
- Kuru fasulye pişirirken zaman açısından her ne kadar düdüklü tencere tercih edilse de, ağır olarak pişen kuru fasulye her zaman daha lezzetli olmaktadır. Bu yüzden eğer vaktiniz varsa, normal bir tencere içerisinde pişirmenizi öneririz.
- Kuru fasulyeyi pişirirken mümkün olduğunca içme suyu kullanmaya özen gösterin. Aynı şekilde fasulyeyi ıslatırken de. Musluk sularındaki kireç oranı ve kirliliği yapılan yemeğin tadını kolaylıkla etkileyebilmektedir.
- Yine kuru fasulye de kullanılan yağ da oldukça önemlidir. Sıvı yağ yerine tereyağı kullanmanız yemeğinizin daha lezzetli olmasını sağlayacaktır.
- Kuru fasulye pişerken, biriken köpükleri almanız çok önemlidir. O köpükler aslında kuru fasulyenin içindeki gazdır ve alınması gerekmektedir.
- Yine bir diğer püf nokta ise kuru fasulyenin suyunun kaynamaya başlamasından sonra içerisine iki üç damla kadar limon suyu sıkmanız, kuru fasulyenin dağılmasını engelleyecek ve daha diri bir şekilde görünmesini sağlayacaktır.
