Su böreği pişirirken fırının ısısı, hazır yufka ve elde açılan yufka arasında değişiklik gösterebilmektedir. Eğer yufkayı elde açmışsanız 200 derece ila 250 derece arasında olmalı, hazır yufka kullanmışsanız da 180 derece ila 200 derece arasında pişirilmelidir.

Su böreği aslında gözde büyütülen bir börek çeşidi olsa da yapımı uzun süren bir börek değildir. Çok sevilerek tüketilen su böreğinin pişirilmesi aslında böreğin lezzetini ortaya çıkaran bir aşamadır. Böreğin pişirilmesinde ise börekte kullanılan yufkanın çeşidi de oldukça önemlidir. Yukarıda da bahsetmiş olduğumuz gibi elde açılan yufka ile hazır yufkaların arasında pişirme farkı bulunmaktadır. Elde kendiniz açtığınız yufkayı 200 ila 250 derece arasında pişirilmesi gerekiyorken, hazır yufkalar 180 ila 200 derece arasında pişirilmelidir.
Söylediğimiz gibi, su böreğinin doğru bir şekilde pişirilmesi lezzetine katkı eden bir aşama olduğu gibi dikkat edilmesi gereken başka ayrıntılarda bulunmaktadır. Bu ayrıntıların başında ise su böreğinde kullanılan malzemelerin tazeliği gelmektedir. Böreğin tam kıvamına ulaşması için kullandığınız malzemelerin taze olması oldukça önemlidir. Aynı şekilde dikkat edilmesi gereken başka püf noktalarda bulunmaktadır. Bu noktalara dikkat ettiğinizde, oldukça lezzetli ve çabuk tüketilen su börekleri yapabilirsiniz;
Su Böreği Yapımında Kullanılması Gereken Püf Noktalar
- Su böreğinde, böreğin içinin ve dışının yumuşak olması oldukça önemlidir. Bu yumuşaklığı sağlamak için ise, yağ ve süt karışımı hazırlamanız gerekmektedir. Aslında bu karışımı her su böreği yapan kişi bilmektedir. Bizim bilhassa değinmek istediğimiz konu, bu karışımın böreğin alt kısmına, yani tabanına gelmemesine özen göstermek gerekmektedir. Aksi halde ne kadar doğru bir şekilde pişirmiş olursanız olun, böreğin alt kısmı yeterli miktarda pişmeyeceğinden, üst tabakaya göre daha çiğ kalacaktır.
- Böreğin üst kısmının daha kızarmış olmasını istiyorsanız, muhakkak böreğinizin üzerine yumurta sarısı sürmelisiniz. En ideal ve en doğru sonucu bu şekilde alabilirsiniz.
- Yufkanızı haşlarken uzun süre suyun içinde tutmamaya özen göstermelisiniz. Aksi halde yufkanız parçalanacaktır. Bu yüzden ideal süre 3 ya da 4 dakikadır.
- Böreği pişirmeden evvel muhakkak fırını ısıtmanız gerekmektedir.
- Su böreği için kullanacağınız malzemelerin her zaman oda sıcaklığında beklemiş olması gerekmektedir. Buzdolabından çıkardığınız gibi kullandığınız bu malzemeler, böreğin olması gereken yapısını aslında oldukça değiştirmektedir. Bu durum ise böreğin yapım aşamasından pişirme aşamasına kadar bizlere problem yaratabilmektedir.
- Su böreğinin ideal pişirilme süresi yarım saattir. Fakat bu süre zarfında böreğinizi kontrol etmeyi ihmal etmemelisiniz.
Su Böreği Nasıl Saklanmalıdır?
Su böreği saklarken aslında diğer böreklerde yaptığınız yöntemleri kullanmak kafidir. Yani fırının içinde saklayabileceğiniz gibi, kapaklı bir kap içerisinde de muhafaza edebilirsiniz. Tek dikkat etmeniz gereken aslında su böreğinin hava ile temasıdır. Sürekli olarak hava ile temas eden börek kısa süre içinde bayatlayacaktır. Yine böreğin muhafaza edildiği yerin nemli ya da rutubetli olmamasına da özen göstermelisiniz. Mümkün olduğunca oda sıcaklığında, hava almayacak şekilde muhafaza edebilirsiniz.
