Asma Yaprağının Bozulduğunu Nasıl Anlarız?
Asma yaprağının bozulduğu kokusunda ve görünüşünden kolaylıkla anlaşılabilmektedir. Fakat bu bozulma belirtileri salamura edilmiş yaprak için geçerlidir. Salamura edilmemiş taze yaprağın bozulduğunu ise direkt yaprağın kendini bırakmasından anlayabilirsiniz.
Asma Yaprağının Bozulduğunu Nasıl Anlarız?
Yukarıda belirttiğimiz gibi salamura edilmiş yaprak da koku ve görüntü olarak direkt olarak ayırt edilebilmektedir. Daha ayrıntılı bir şekilde anlatmamız gerekirse;
- Salamura yaprak bozulmaya başladığı zaman üzeri çil çil olur, üzerinde siyahımsı noktalar belirmeye başlar. Bu bozulma sürecinin ilk başlarında kullanılabilmektedir fakat ilerlemiş vaziyette ise kesinlikle tercih edilmemelidir.
- Bir diğer bozulma belirtisi ise kokudur ve yine salamura yaprak da meydana gelmektedir. Normalde salamura edilmiş yaprağın kendine has güzel bir kokusu olmaktadır. Fakat bu koku sizi rahatsız eden bir kokuya dönüştüyse yine kesinlikle tüketilmemesi gerekmektedir.
Salamura Yaprak Nasıl Yapılır?
- Salamura yaprak yaprağın daha uzun süre saklanması için yapılan bir yöntemdir. Kaya tuzu kullanılarak yapılan bu yöntemde öncelikle yaprakları boyu ve büyüklüğünü baz alarak ayırmalı bu yaprakları desteler halinde ayırıp, rulo yaparak kavanoza yerleştirmeniz gerekmektedir. Her destenin sap kısmına bir çay kaşığı kaya tuzu yaparak rulo yapmanız gerekmektedir.
- Tam olarak yukarıdaki fotoğraf gibi bir görüntü elde ettikten sonra kavanozun büyüklüğüne göre, 1 litre suya 200 gram kaya tuzu olacak şekilde ayarlayıp, tuz ve suyun karışmasını sağladıktan sonra kavanozun içine, kapağı kapatmanıza engel olmayacak şekilde doldurun. Bu şekilde salamura yaprağınızı hazırlamış olacaksınız.
- Burada dikkat edilmesi gereken, kavanozun içine yapraklarınızı sıkıştırırken yırtmamaya özen göstermeniz gerekmektedir. Tuzlu su karışımını kavanoza dökerken ise birden değil, yavaş ve her alana ulaşacak şekilde dökmelisiniz. Arada bir suyunu kontrol ederek, azalma olduysa yaprakların üzerine tekrar tuzlu su eklemeniz gerekmektedir.
- Salamura yaprak yaparken belki de dikkat edilmesi gereken en önemli ayrıntı yapraklar kesinlikle hava ile temas etmemelidir. Aksi halde salamura işlemi gerçekleşmeyecektir.
Salamura Yaprak Hazırlarken Dikkat Edilmesi Gerekenler
- Salamura için hazırlayacağınız yaprakların aşırı tüylü olmasından kaçınmalısınız. En azından alt kısmı ve yüzeyi aynı tüy oranına sahip olmamalıdır.
- Satın aldığınız ya da topladığınız yaprakları salamura yapmadan önce saklamak için gazeteye ya da havluya sarabilirsiniz. Böylece naylon poşetlere nazaran daha uzun bir süre tazeliğini korumuş olacaktır.
- Salamura yapacağınız yaprakların yırtık olmaması gerekmektedir. Keza bu şekilde olduğunda da bu yaprakları kullanmanız oldukça zor olacaktır.
- Salamura için dayanıklı yapraklar damarlı yapraklardır. Eğer satın alacaksanız bizzat yaprakların damarlı olduğuna dikkat etmeniz gerekmektedir.
- Yukarıda belirtmiş olduğumuz gibi, su ve tuz oranını doğru bir şekilde ayarladığınızdan emin olmanız gerekmektedir. Aksi halde yapraklarınızın aşırı tuzlu olmasına sebep olabilirsiniz.
- Salamura için hazırladığınız yaprakları maksimum 3 gün, en az 1 gün muhakkak dinlendirilmesi gerekmektedir.
