Kuru fasulye yaparken kolay bir şekilde pişmesi için bir gece öncesinde ıslatılarak bekletilir ve fasulyelerin yumuşaması sağlandıktan sonra pişirilir. Acele ile pişirilmesi gereken durumlarda ise fasulyenin ıslatılarak bekletilmesi mümkün olmadığı için direkt olarak pişirilmeye başlanır fakat bu durumda fasulyenin pişmesi de bir hayli zaman alacak bir işlemdir.

Kuru fasulyenin hem gazının alınması hem de kolay bir şekilde pişmesi için muhakkak bir gece öncesinden ıslatılması gerekmektedir. Fakat bazen acil gelişen durumlarda kuru fasulye düdüklü tencere kullanılarak ıslatılmadan pişirilebilmektedir. Burada öncelikle şunu söyleyebiliriz; Eğer fasulyenizi ıslatmadan, normal tencere kullanarak pişirecekseniz uzun bir süre beklemeniz gerekecektir. Düdüklü tencere ise bu süreyi neredeyse yarı yarıya indirmektedir.
Kuru fasulyeyi ıslatmadan pişirmek için kullanabileceğiniz malzemelerden biri süttür. Öncelikle tencere içine aldığınız fasulyelerinizi üzerini 2-3 parmak geçecek kadar süt ile doldurun ve bu şekilde haşlanıncaya kadar pişirin. Su ile haşlamaya nazaran fasulyeler süt kullanıldığında 40 dakika ile 1 saat civarında yumuşamaktadır. Yumuşayan fasulyelerinizi son bir kez sudan geçirip sütten iyice arındırdıktan sonra pişirme kısmına geçebilirsiniz. Burada düdüklü tencerenin içine tüm malzemeleri koyduktan sonra ilk önce bir süre üstü açık bir şekilde pişirmenizi öneriyoruz. Daha sonrasında ise tencerenin kapağını kapatarak yarım saat kadar pişirebilirsiniz. Düdüklü tencerenin düdüğü ötmeye başladığında ise içindeki buharı çıkarın ve kısık ateşte 10 dakika daha pişirdikten sonra altını kapatın.
Kuru Fasulye Yapımının Püf Noktaları
- Bir kuru fasulyenin lezzetli olması için ilk dikkat edilecek unsur malzemenin kalitesidir. Kullandığınız kuru fasulye başta olmak üzere, yağ, salça gibi malzemelerin de taze ve kaliteli olması gerekmektedir. Eğer et kullanacaksanız etin muhakkak taze olması sağlık açısından da oldukça önemlidir.
- Kuru fasulyenin hiç değişmeyen püf noktalarından biri de ıslatılmasıdır. Bu hem fasulyenin gazının alınması hem de yumuşaması için dikkat edilmesi gereken bir unsurdur.
- Bilhassa dışarıda yediğimiz kuru fasulyelerin ve hatta genellikle kuru fasulyesiyle meşhur olan işletmelerin yine önemli bir püf noktası ise, kuru fasulyeyi çabuk pişsin diye düdüklü tencerede haşlamıyorlar. Bunun yerine büyük tencereler içinde içme suyu kullanarak haşlıyorlar. Kullanılan termos sularda fasulyenin cinsine göre tadını değiştirebildiğinden, bu riski hiç almıyorlar ve direkt fasulyeyi içme suyu ile yapıyorlar.
- Kuru fasulye pişerken üzerinde oluşan köpükleri “tahta kaşık” kullanarak almalısınız. Bu köpükleri almanız, oluşabilecek gaz probleminin de önüne geçmektedir.
- Kuru fasulyenin önemli diyebileceğimiz bir diğer püf noktası kullanılan yağdır. Eğer elinizin altında varsa sıvı yağ kullanmak yerine tereyağı tercih etmenizi öneririz.
- Fasulye nişastalı olduğundan, kaynatılması nişastanın çökelmesine sebep olmaktadır. Bu yüzden bazı bölgelerde nişastadan kaynaklanan sıvının açığa çıkması için un kullanılmaktadır. Un kullanacaksanız şayet bir yemek kaşığı unu fasulyelerini koymadan evvel yağ ile birlikte iyice kavurmanız gerekmektedir. Un kesinlikle fasulyenin tadını yoğun bir şekilde etkilemez fakat ona daha doğal bir tat ve koku katar.
- Son olarak, kuru fasulye pişirirken daima bir iki damla limon sıkmalısınız. Bu şekilde fasulye dağılmayacak, taneli ve diri olacaktır. Fasulyenin ağız sulandırıcı gözükmesinin sağlayan küçük bir ayrıntıdır limon.
