1-)Mayanın Fazla Miktarda Kullanılması
Evde yoğurt yaparken ilk olarak dikkat edilmesi gereken nokta kullanılacak olan mayanın miktarına karar vermektir. Fazla maya koyarsam kıvamı daha iyi tutar mantığı işlemeyip yoğurdunuzun daha ekşi olmasına neden olmaktadır. Bu nedenle doğru miktarda maya koyarak doğru oranda sulandırmak ve de sütün içerisine doğru şekilde ilave etmek oldukça önemli noktalardır. Bunun için 1 litre sütün için dolu dolu 1 tatlı kaşığı yoğurt eklemek gerekir. Ancak mayayı doğrudan sütün içerisine ilave ederek karıştırmakta iyi sonuç vermemektedir.
Bunun için dolu dolu 1 tatlı kaşığı yoğurdu küçük bir kase içerisine alarak üzerine az miktarda su ekleyip pürüzsüz bir kıvam elde edene kadar iyice karıştırın. Bu aşamada hazırladığınız karışım koyu kıvamlı bir ayran kıvamında olmalıdır. Daha sonra kaynatmış olduğunuz sütü kaymağını dağıtmadan orta noktasından delerek hazıladığınız mayayı sütün içerisine yavaş yavaş boşaltarak bir yandan da hızlı bir şekilde karıştırarak iyice karışıp mayanın iyi bir şekilde dağılmasını sağlayın.
2-)Sütün Olması Gerekenden Daha Sıcak Olması
Sütün sıcaklığı, ideal kıvamda ve oldukça lezzetli bir yoğurt elde etmek için oldukça önemli bir noktadır. Eğer kaynatmış olduğunuz sütü ılımasını beklemeden yoğurt mayalamak için kullanırsanız yoğurdunuz ekşi olur. Yoğurt yapımında kullanılacak olan sütün sıcaklığı ise bebek maması kıvamında olmalıdır.
Hafif ekşi yoğurt severler için ya da tatlı yoğurt sevenler için ufak farklılıklar olabilir ısı konusunda. Bu konuda sizin için en ideal sıcaklığı belirleyecek olan damak zevkinizdir. Bunun için birkaç sefer yoğurt yaparak kendiniz için ideal kıvamı bulabilirsiniz. Ancak her seferinde derece kullanarak kullandığınız sütün sıcaklığını bir kenera not etmeyi unutmayın.
