Yoğurt Mayalamak İçin Süt Kaç Derece Olmalı?
Yoğurt mayalarken kullanılacak ideal sıcaklık 45 derecedir. Fakat bazen bu derecede yoğurdun mayalanması için yetersiz sayılabiliyor. Burada ise aslında dikkat etmeniz gereken sütün kıvamı olmalıdır. Böylece daha doğru bir şekilde mayalanma işlemi gerçekleşmiş olur.

Yoğurt mayalarken dikkat edilmesi gereken bazı unsurlar vardır. Bu unsurları sütün kalitesi, kullanılan mayanın tazeliği, yoğurdun kıvamı ve mayalanma derecesi olarak sayabiliriz. Genel olarak mayalanma işlemi 45 derecelik bir ısıda gerçekleşmelidir. Bu ısıyı anlayabilmeniz için ise serçe parmağınızı kullanabilirsiniz. Eğer 7 ile 10 saniye serçe parmağınızı sütün içinde tutabiliyorsanız bilin ki mayalanmaya hazır hale gelmiştir.
Yoğurt mayalarken sıcaklığın düşük olması ya da aşırı sıcak olması durumlarında eğer yoğurdu mayalarsanız, yoğurdunuz ya ekşi ya da sulu olacağını da belirtelim.
Yoğurt Yaparken Uygulayacağınız Adımlar Nelerdir?
- Öncelikle açık süt ya da günlük sütten yoğurt yapabilirsiniz. Marketlerde satılan kapalı sütler içindeki katkı maddesinden dolayı yoğurt olması çok güçtür ve açıkçası yoğurdu yapmış dahi olsanız, doğal olmayacaktır. Yani bu şekilde bir uğraş vermek yerine marketlerden hazır yoğurt almanız daha doğru olacaktır.
- Sütünüzü taşacak kıvama gelince kadar iyice kaynatmanız gerekmektedir. Bu kaynama esnasında her 10 dakikada bir karıştırmanız gerektiğini unutmamalısınız. Süt taşar gibi olduğunda ise altını kısarak, bu şekilde 15 dakika daha kaynatmalısınız. Daha sonrasında yukarıda da bahsettiğimiz gibi, serçe parmağınız ile test ederek sıcaklığını anlayabilirsiniz.
- 1 litre süt için 1 yemek kaşığı yoğurt olacak şekilde mayalanma işlemine başlayabilirsiniz. Yoğurt mayalarken, maya olarak yine yoğurt kullanılmaktadır. Bu maya mümkün olduğunca daha önce yapılan yoğurt, ya da doğal bir şekilde hazırlanmış yoğurttan bir kaşık olarak ayarlanmalıdır. Eğer yapacağınız yoğurt için kullandığınız süt 1 litreden fazlaysa, yazdığımız ölçüye göre ayarlamasını kendiniz yapabilirsiniz.
- Mayayı eklerken mümkün olduğunca kenardan ve sütün üstündeki tabakayı dağıtmadan dikkatli bir şekilde dibinde karıştırmalısınız.
- Yoğurdu mayaladıktan sonra yavaş soğumasını sağlamak için battaniye, polar gibi örtüler ile iyice sarmalı ve yoğurdun bulunduğu tencereyi çok ayak altı olmayan bir yere koymalısınız.
Ev Yapımı Yoğurt Nasıl Muhafaza Edilmelidir?
- Yeni yaptığınız yoğurt henüz soğumadan kesinlikle buzdolabına koymamalısınız. Yukarıda da bahsettiğimiz gibi ısının yavaşça düşmesi için sarmanız gerekmektedir.
- Yoğurt en nihayetinde sütten üretildiği için oda sıcaklığında kalmaması oldukça önemlidir. Aksi takdirde bozulma süreci oldukça hızlanacaktır.
- Yoğurdu saklarken her zaman buzdolabı tercih etmelisiniz. Hava ile teması tamamen kesilmiş olarak, cam kap veya çelik tencere içerisinde muhafaza etmeye özen göstermelisiniz.
