- Kurabiye yaparken sıvı yağ kullanımından kaçınmanız gerekmektedir. Sıvı yağ kurabiyenin istenilen kıvamda olmasını engelleyebildiği gibi yavan bir tat verecektir. Fakat tereyağı kullanırsanız, bu durum tam tersine olacaktır. Yani lezzetli ve ağızda dağılan bir kurabiye yapmak istiyorsanız kesinlikle tereyağı kullanmalısınız. Bu tereyağı kullanımında da yağın bilhassa soğuk olmasına özen göstermeniz gerekmektedir.
- Kullanacağınız süt, yumurta gibi malzemelerin ise oda sıcaklığında olmasına özen göstermeniz gerekmektedir.
- Kurabiye yapacağınız tarif ölçüsünün üzerinde un kullanmamaya özen göstermeniz gerekmektedir. Fazla un kullanmak kurabiyenin sert olmasına sebep olacaktır. Yine aynı şekilde az kullanmanız da kurabiyenin çok çabuk dağılmasına neden olabilmektedir. Bu yüzden kullandığınız unun ölçüsü oldukça önemlidir.
- Kurabiyenizi yaz aylarında yapacağınız zaman tereyağı çabuk eriyebildiğinden dolayı daha cıvık bir halde olabilmektedir. Böyle bir durumda 15 dakika buzdolabında bekletmeniz hamurun toparlanmasını sağlayacaktır.
